I'm gonna be adapting this for a Keto Fat Bomb. I use unsweetened baking chocolate, stevia extract and HWC. 0:44 2 : 1 ratio "Super Thick & Fudgy" 2:29 1 : 1 ratio "Fillings, Glazes, Etc." 3:17 2 : 1 ratio "Thin & Pourable OR WHIPPABLE!"
I'm going to make a chocolate cake and use three different types of ganache on the different layers - how amazing is that going to be. Thanks for excellent information!
I've seen these ratios before, but the problem I have is figuring out the measurement being used. Do I use ounces? Since the chocolate is weighed and the cream goes by liquid ounce, do these match up?
So 8 oz. is 1 cup. So if you use 8 oz. of chocolate, depending on the ratio you are using you would use either a 1/2 a cup of cream, 1 cup of cream, or 2 cups of cream.
www.cakecentral.com/forum/t/741743/the-ganacherator this uses both measurements to make ganache... I just used it and so far it looks like it was fine. I just weighed the chocolate in ounces, and measured the heavy cream in ounces using a measuring cup.
Roy G You're welcome :) I actually got more ganache than I needed ^^ So there is enough left over to make chocolate covered strawberries, truffles, or slather in the middle of another layer cake if needed.
Hi dear plz tell I made 2:1 ratio ganache but its thickness not there to ice the the cake what do u suggest I should add more melted chocolate in it.... I had made it yesterday n till now it's not thickened
The last written note has a typing mistake dat just confused me...instead of 1:2...its written 2:1, although u were explaining d whipped ganache.....thnx for d detailed vdo...was much needed...👌💌
Mindy Taylor white chocolate tecnically isnr chocolate. its cacao buter. cacao butter is what makes all of this yummieness possible so you make it the exact same way. As a matter of fact, adding a bit of white chocolate to pure chocolate makes the pure chocolate work better (and no it does not make milk chocolate like that).
I haven't tried, Meghan! But I'm thinking coconut cream might work nicely: www.amazon.com/Native-Forest-Organic-Premium-Unsweetened/dp/B00AF7XMYY If you give it a try let us know how it goes! xo
+just me You can use milk instead, or even water. Ganache is an emulsion of chocolate and liquid, it doesn't have to be cream although it almost always is.
mine too, popped it in the fridge every time it melts, still doesn't help. i think it's the cream I used. I settled for all purpose cream instead of heavy cream. now I'm frustrated with my ganache. should've done the 1:1 ratio instead
Will the whipped ganache melt over time? I'm planning on making a cake however will be traveling for about 2.5 hours in the car but I'll be having the AC on in an attempt to keep it cool, still concerned though :/
