  • Today, I’m sharing how to make a simple yet amazing chocolate mirror glaze with the most important tips to make it look and taste perfect!
    INGREDIENTS FOR THE CHOCOLATE GLAZE
    • Gelatin sheet: 19g (0.67oz)
    • Water: 200g (7oz)
    • Heavy cream: 200g (7oz)
    • Granulated sugar: 300g (10.6oz)
    • Cocoa powder: 130g (4.6oz)
    * 1 batch fills about 3/4 of the 1000g container

    Great video. Today I tested out a newly to decorate my yearly Christmas cookies. I usually make sugar cookies and decorate them a basic butter cream which is colored in various colors. Today I poured different colored mirror glazes on them and also tried multiple colors on some. It turned to be as time consuming as using a buttercream frosting but the mirror looked great. I had to handle the cookies carefully since the glaze is soft. So my next step is figure how I will box them.
    I did use a piping bag to add some names and other embellishments to the cookies.

    I want to try making mirror glaze like this for a suprise cake for my wife...this looks amazing.
    I'm thinking of creating a larger 8inch vanilla cake, with an intense strawberry gel & piped swiss vanilla buttercream on all 2 layers.then chocolate mirror glaze & decorate with half dipped chocolate fresh strawberry, will throw on a few nibs & candied almond dust

    Lovely! Aya, you are the first one who does not use corn syrup or glucose syrup in making mirror glaze.
    Also, thank you for clearly explain about the gelatin sheet. I purchased some out of watching youtube but could not understand the difference or have knowledge on how much to use.     Hi Anya, thank you for the video. I am planning to make petit four for my niece’s wedding shower. Can you tell me the glaze is touchable after it cooled down. I don’t want the quests got it all over their fingers and touch anywhere in the house with their hand. Also can you tell me where did you buy the 6 tiered cake stand at your background.

    I have used Bakers chocolate for mirror glazes, but never cocoa powder! This seems much easier than using chocolate bars. I’m doing a caramel mousse cake with a caramelized pretzel filling, and am going to cover it with this glaze. Thank you for this recipe 😊

      JoyousCookingCo I totally agree. This is so much easier than using chocolate bars. We're able to make a delicious glaze and with the current grocery prices, using cocoa powder is easier on the grocery bill. Thank you Aya for this wonderful tutorial.       Thank you! You can use the same amount of gelatin: 19g of gelatin powder hydrated in 4-5 times amount of cold water. (It usually say how much water you should add in the package of gelatin powder but usually it’s around 4-5 times).
      I recommend to make with 19g and see if you like the softness and add more next time if you want! It is probably slightly softer with gelatin powder but I think it should not be a big problem!

    Hi Aya, thanks for sharing your recipe and great video. I made your glaze and it is fantastic to use. I have a question in regards of left overs , I keep it in fridge , but if I want to re use it , should I just re heat to boiling then cool down to 40 c ? Thanks !

      The liquids can get evaporated slightly more than we want if you boil, so you can cook slowly and stop right after its melted. Or I like to heat up with a microwave in a microwave safe air tight container. When I don’t have a microwave, I place the container in a hot/warm water in a huge pod and let it melt slowly. Hope that helps!

    these look great! I've made a mirror glaze cake twice but with white chocolate and the gelatin powder. I really want to try the sheets now! Are the roses edible? I didn't know they were but I guess they probably are or you wouldn't be feeding them to your kid. lol Great job!

    I was so excited to see this video because after watching your chocolate mousse recipe I really wanted to use it in the pretty mousse cakes I’ve been seeing & I knew yours would be delicious! I looked at the recipe but I’m confused on how much gelatin to use. I ordered from your link. Does it take the entire package? I thought you used 3 sheets but then it looked like more.       Thank you!🙏 Great😊 I used about 9 sheets this time for 19g but I recommend to scale just in case! One package comes with 20 sheets.

      Do you add the gelatin powder directly into the chocolate, or do you add it in water and then put the mixture into the chocolate?

      The base of mousse cake? You can use any mousse you want. I made chocolate mousse tutorial before, so check it out if you are interested. And I usually like to freeze the mousse all the way before pouring the glaze, it’s easier for me!

    How do you reuse your glaze, should it be heated, and how many times can it be stored and re-used?

      You can keep it in the refrigerator ,then in a double boiler warm it,let it cool down room temp like 30c and start glazing

    Love this. Glad to find a mirror glaze recipe without actual chocolate. Makes it an affordable option. I bake professionally, but in a small town where the locals don't have a lot of money. And our ingredients super expensive. So minus chocolate is a blessing. Any chance that there's a white/coloured version??? 🤣😂🤣

    Aya, may I ask did you use about 11 sheets of Platinum? Seems a lot but want to check. Pkg I got has 20 sheets and its 34 gm. Your recipe calls for 19gm. It's 1.7 g each sheet? Pls confirm that it's 11 sheets. Thanks
