Yum! That looks so good… and easy! I can see adding a can of those little mild green chili peppers! And using a muffin tin, because things tend to not cook in the middle for me, lol. And sprinkle some smoked paprika on top.
What a great idea for a holiday dish, especially as it works for us in the Southern Hemisphere, fresh corn is just appearing here right now. Never knew you could make creamed corn so easily, so useful. Yum!
Thanks for this recipe. It's so good! I made it tonight but didn't have enough corn; I blended what I did have and a subbed in a can of black beans for the other measure of corn. Absolutely delicious and will be making this again. Thank you.

This looks like a great dish to take to our work potluck (since I’m working Xmas this year at the hospital). Love the colors and the simplicity. I don’t cook with salt but I welcome a bit of iodized salt on the finished dish (gotta get my iodine somehow). Thank you for the recipe and demo!

We used to have a Mexican restaurant (I've forgotten the name) that served their dishes with a scoop of a corn 'casserole'. It was actually pretty sweet and very creamy. I think I will make your recipe and add a bit more liquid to try to replicate that restaurant dish. Thanks so much for this delicious recipe (and my walk down memory lane, lol.)

oh, oh, OH! I think I have discovered a vegan version of Cornbread dressing!!!! I'll just add the spices in Italian sausages, (crushed fennel seeds, roasted, a bit of Italian seasoning, or maybe just the rosemary, a bit of crushed red pepper and some SAGE!) I haven't been this excited over something new in a long time! :) I think I can safely sub roasted red bell peppers, chopped, because I have a whole jar full that needs using up.
Hi Kathy. Other than the 1/2cup plant milk, its all Mary's Mini compatible. I wonder if you used 1/2cup water instead of the milk if that would really affect the taste that much. Its already a lot of corn, so I bet It would still taste fine for the mini. Let me know if you attempt this and replace the milk with the corn. Really, even with the oat milk, its 0.5g of fat per cup and we are using 1/2 cup for the whole recipe. So thats 0.25g (Thats why I'm a math teacher!!)of fat from that milk spread out over the whole recipe. I personally would use it just as it is for the mini.
Hello all . I actually say in the video to use corn meal, but all I had was polenta because I eat a lot of polenta. So I threw that in the blender to make corn meal out of it. But yes, you should use corn meal and I do say to use corn meal in the actual video. I thought it was fine either way, but Tim says it's too gritty if you use polenta instead of cornmeal. Yes! I am not a pimento fan, so subbing with green chili peppers!!!
It's well after the holidays, but I intend to make this dish soon. I grew up eating cream corn and love polenta, so it seems perfect to me.

Rather than whizzing up polenta a bit, wouldn’t regular cornmeal be the same thing?

I love all your recipes…..thank you. You use a lot of garlic…… I love garlic too ……but the garlic- breath can be a bit annoying ? 😜🧄🧄
ATK soaks the raw garlic in lemon juice, then strains it out. They say it tempers the garlic. They have a video on it.
