Just made this again. Delicious. You can get everything you need at Trader Joe’s. I do have to say that I only recommend doubling the tortillas for the very bottom layer. The other layers I do a single layer. Two reasons. If you double up every layer you need to buy three packs of Trader Joe’s corn tortillas and that gets a little bit pricey because that’s a lot of tortillas. Also with that many more tortillas it tends to get dry leftover in the refrigerator faster than when there are less tortillas. I’ve made it both ways. At Trader Joe’s for I think $.99 you can buy a small can of green chilies which are mild. Same area where you buy all of the beans. I mixed my can of green chilies into the stirfried vegetables right at the end. It really gave the filling a ton of flavor. Personally I recommend mashing up an avocado with some lime and salsa in it and salt and glopping on the guacamole on top. Drizzled with red salsa and cilantro. Yum Yum. So good. I didn't have zucchini, so I used bell pepper, and I forgot the spinach 😅, but it was a bit hit. It will definitely be going into the rotation, thank you so much for the awesome recipe!! Omg. I mean like O-M-G! So ….the cashew salsa Verde sauce…. Uh, how did I live a these years without it? Seriously. This can be a dressing for just about anything. I didn’t have the same size pan and I didn’t have cumin, or mushrooms. So, I had to omit the mushrooms. I had Sazon Goya and Goya adobo. I also had my vegan cheese sauce that I make with Yukon gold potatoes, white miso paste, nutritional yeast and seasonings that I added on top to brown. This dish is crazy amazing. I made it without any oil. I’m in heaven. This recipe is a keeper. …p.s. don’t be shy and skimpy on the corn tortilla either. It was a star of the show.

I just made this & it’s ridiculously delicious! My brother (non-vegan) was here & ate with us & he normally doesn’t like my vegan food…he loved it! He even took some home with him😋
Yestersay I ate 6.5 pounds of sweet potatoes in one meal. That was all what I ate yesterday. The day before, I ate 2 big heads of lettuce, a few tomatoes, and 2 pounds dry weight of jasmine rice. I ate all the rice in one meal and ate the vegetables an hour earlier.
I make a similar dish, a "Mexican lasagna". I also love using corn tortillas, and for the veg I use: kidney beans, corn, bell peppers, zucchini, leeks and chickpeas, mixed in with salsa. Then I layer it just like you did and bake it in the oven. It's sooo good! I serve it with vegan guac and vegan nacho. I have to try yours too with salsa verde. It sounds delicious!

I've made this twice. Its amazing but unfortunately very high calorie according to cronometer, even without the cooking oil and double layer tortillas. Kinda worth it though
Calories aren’t bad for you. There are calories in everything. The important thing is where the calories are coming from. Unhealthy calories compared to healthy calories. 120 calories in 2 Oreos, high fructose corn syrup & other crap that’s not healthy. 100 calories in 1 banana, necessary sugar for your body, healthy calories.

The only hominy I’ve had looks like large white corn in a can and has a squishy texture. It tastes pretty good but mild. I’ve never had it not in a can and I’m not sure where to buy it fresh.
Great dish! I couldn't find corn tortillas in my local so I used potatoes instead. Boiled them for 15 mins, then sliced them thinly to make the layers. Turned out scrumptious thanks!
