  • Old Fashion Chunky Potato Soup Recipe
    Old Fashioned Chunky Potato Soup
    INGREDIENTS
    • 2 pounds russet potatoes, peeled and cut into large chunks (about 1-1/2 inch)
    • 1/2 cup chopped sweet onion
    • 1/2 cup chopped celery
    • 3 tablespoons all purpose flour
    • Kosher salt and freshly cracked black pepper, to taste
    • 1/4 to 1/2 cup (1/2 to 1 stick) salted butter
    • Water to cover
    • 1 (12 ounce) can evaporated milk
    • Shredded cheese, for garnish, optional
    INSTRUCTIONS
    1. Toss the potatoes with the onion, celery, flour and salt and pepper; set aside for about 10 minutes.
    2. Meanwhile melt the butter in a Dutch oven or soup pot. Add the potato mixture to the pot; stir to coat. Add enough water to cover the potatoes and bring to a boil; stir in the milk, reduce to a simmer, and cook, uncovered, stirring occasionally about 25 to 30 minutes, or until potatoes are tender.
    3. Taste, adjust salt and pepper, and continue cooking on simmer, uncovered, until the soup reach desired consistency and thickness. Garnish each serving with shredded cheese if you like and serve immediately.

I am making potato soup and using your recipe, but we didn’t use chicken broth. We used water. Will post an update on how it turns out when it’s done.
***Update: this recipe was exactly what we were looking for. The potato soup came out amazing! I followed every thing on this recipe. Easy, very tasty and doesn’t call for a million ingredients. Thank you Marie! So glad we found this recipe. It’s perfect!

When I grew up my mama made this soup a lot. It was definitely budget friendly and delicious. She made hers identical to your recipe. I make mine the same way. She ALWAYS made cornbread with her soup. You just can’t beat soup and cornbread.

Just made potato soup last night.
    My favorite soup!!
Made it like my Mom and grandmother did!!
Ours uses onion(leeks if you have them) and celery softened in butter(or bacon grease, lard or fat of some kind).
Then add diced potatoes and water or chicken stock to cover. Bring to a boil and then simmer until potatoes are done. Mash some of the potatoes to thinken.
My Mom and grandmother would also add some flour and milk to make it creamy. Salt and pepper to taste.
    Very simple and delicious!!

Potato soup is my favorite soup especially with cheese in it and sometimes I add bacon too. It's good comfort food and warms the bones. Looks good Marie. I remember having pinto beans and cornbread lots of time too when I was growing up.. there was 6 kids and Momma and Daddy. My parents made cornbread from scratch in a cast iron skillet. I made some pinto beans not long ago. I was wanting some and they turned out so good.
