Zach is the guy who accidentally invents a new type of slime each time he tries to feed his family
He's Robin Williams in Flubber.
Just so its clear what Zach did to make a hilarious bubble gum beach ball of dough, he used vital wheat gluten instead of normal bread flour. Vital Wheat Gluten like pure protein (like 80%) and is meant to be added to normal bread flour (around 12-14%) to increase it's protein content, and adds chewiness to the bagel. This is because protein in flour helps create strong gluten strands (hence the name). So as you can imagine, making bagel dough out of only vital wheat gluten will leave you with a dough of gluten strands that are tough as nails.
Vital Wheat Gluten is great for bagels! But like, you wanna use around 1-2 tablespoons with 500g of bread flour.
i cringed a lil watching him using the hand mixer too 😅 that’s one way to make some TOUGH gluten

To be fair the flower they gave him is just pure gluten. It's used to make seitan (fake meat) and the texture is hard to work without without adding gluten the mix.

Bread recipes like this are really easy to hack/figure out if you bake often. The bread flour is how you figure out all the other ingredients, so Ned remembering what all is used lets him figure out how to do it

Trying something for a second or third time (because it’s important or you really want to at least have a vague grasp of it) after an initial struggle shows real character and determination - the true Try Guys spirit!

Vital wheat gluten is literally *just* gluten and is what seitan is made out of. So a lot of gluten + yeast apparently caused a very tall, very rubbery seitan dough 😂

I believe it's the flour he used plus the yeast, some ingredients have like I don't know what would be the term but they boost the effects of yeast and he went into his meeting and I assume he left it out for too long so the yeast basically explanded to it's fullest and basically to make it simple it lost it's freshness and dried out

It was from using just gluten flour in the first dough.
From my experience making bagels it's so hard to determine what exactly he did to create the crunch effect he got but I'm going to chalk it up to over proofing, possibly not kneading enough or over kneading (because really any extreme in either direction is not a good thing)(?) and horrible horrible luck.
my guess would be that the beeswax stuff let it dry out and go hard on the outside whereas covering with a damp cloth (like Ned and Keith) stops the dough from drying out

And that's all I can remember. She was doing Duolingo on her phone while I watched this too. Then we watched some of the dumpling Without video, and she said of Eugene, "Oh, well he's very handsome." Keith, I'm sorry she didn't say anything about you! But I think in the context of her comments, it means you did a really solid job.
