Hi! I’m an actual baker who went to culinary school and worked in a couple bakeries as well as an italian restaurant. I just want to say Keith you did absolutely fantastic and you definitely improved, your top wasn’t cracked and was nice and smooth while your crust didn’t turn out too bad! You totally improved and should give yourself more credit :)

***Pro-tip for anyone who cares: It's easier to use a food processor to combine the ingredients for the crust, it gets the crumbly texture the guys are going for in less time and it keeps the dough from getting overworked, once it's crumbly smoosh it together and wrap it in saran wrap and let it chill in the fridge :)
As someone who uses a fork every year and hates how tired her arms get, I appreciate this BUT I worry about over doing it. Another pro tip: use salted butter it the perfect amount and do as Emma recommends COLD butter.
Fun fact of the day: if you want pie decorations on top to be more distinct, you can just chill or freeze them beforehand in the fridge before baking. I hope you guys have a nice day!

In case of a retry, retry, here's a crust tip I figured out after a year of making quiche every day for work. I would grate my very cold butter with a box grater. Short strokes, making the butter strands about a quarter inch long. I found this easier, quicker, and more consistent than any other butter technique. My quiche brought all the boys to the yard. Give it a try!
Clint Mcintosh that’s what my mom’s side of the family does for their pies, and quite a few of them ran or worked at bakeries! It really does make a difference, especially if you’re just starting out making pies.

Oh I didn't know this! Also pre-cooking your fruit filling on the stove with some sugar and spices will solidify all that juice. Then just pop it in the crust and it makes for shorter bake time as well. Just make sure there's a vent in the top crust for the steam! :)

I made a Eugene inspired "Berry Drunk Batshit Pie" a week or so ago. Blueberries, raspberries, blackberries, lime zest, sugar, and gin topped with bat shaped cutouts of the crust. I decided on Gin due to it being made from juniper berries so I figured it would pair well with the rest of the berries and boy did it. One of the best pies I have ever eaten in my life. This pie will be a regular occurrence in my house now.
@@Isabelle_195 I just used a basic premade frozen pie crust for the pie base, sugar cookie bat cut outs to decorate the top, then for the filling I used about three cups fresh mixed berries (blue, black, and raspberries), 2 tbsp fresh lime juice and the rest of the lime zested, pinch of salt (about ¼ tsp), ½ cup sugar, and ½ gin (Amsterdam or aviation). Once the pie is together sprinkle the top with sugar in the raw then bake at 350 until the cookies and crust cook through fully. Super delish but I had to stop eating it myself. Turns out I'm very allergic to juniper. XD

I just want to say Keith you did absolutely fantastic and you definitely improved, your top wasn’t cracked and was nice and smooth while your crust didn’t turn out too bad! ***Pro-tip for anyone who cares: It's easier to use a food processor to combine the ingredients for the crust, it gets the crumbly texture the guys are going for in less time and it keeps the dough from getting overworked, once it's crumbly smoosh it together and wrap it in saran wrap and let it chill in the fridge :)
also i feel like that way you wouldn’t melt the butter as fast as it would if you were working it by hand
Alternatively grate your super cold butter (freeze it if you need to).
As someone who uses a fork every year and hates how tired her arms get, I appreciate this BUT I worry about over doing it. Another pro tip: use salted butter it the perfect amount and do as Emma recommends COLD butter.

In case of a retry, retry, here's a crust tip I figured out after a year of making quiche every day for work. I would grate my very cold butter with a box grater. Short strokes, making the butter strands about a quarter inch long. I found this easier, quicker, and more consistent than any other butter technique. My quiche brought all the boys to the yard. Give it a try!
Clint Mcintosh that’s what my mom’s side of the family does for their pies, and quite a few of them ran or worked at bakeries! It really does make a difference, especially if you’re just starting out making pies.

To Eugene: some tapioca powder mixed into your filling ensures a non-liquidy filling almost every single time
Cornstarch aswell can firm it up
Star Lynly tapioca flour is the better choice if you have it as it doesn’t make the fruit filling milky colored like cornstarch.

Oh I didn't know this! Also pre-cooking your fruit filling on the stove with some sugar and spices will solidify all that juice. Then just pop it in the crust and it makes for shorter bake time as well. Just make sure there's a vent in the top crust for the steam! :)

I made a Eugene inspired "Berry Drunk Batshit Pie" a week or so ago. Blueberries, raspberries, blackberries, lime zest, sugar, and gin topped with bat shaped cutouts of the crust. I decided on Gin due to it being made from juniper berries so I figured it would pair well with the rest of the berries and boy did it. One of the best pies I have ever eaten in my life. This pie will be a regular occurrence in my house now.

@@Isabelle_195 I just used a basic premade frozen pie crust for the pie base, sugar cookie bat cut outs to decorate the top, then for the filling I used about three cups fresh mixed berries (blue, black, and raspberries), 2 tbsp fresh lime juice and the rest of the lime zested, pinch of salt (about ¼ tsp), ½ cup sugar, and ½ gin (Amsterdam or aviation). Once the pie is together sprinkle the top with sugar in the raw then bake at 350 until the cookies and crust cook through fully. Super delish but I had to stop eating it myself. Turns out I'm very allergic to juniper. XD
