- I am transforming canned butter beans into a delicious dinner. This recipe is my version of the trending Marry Me Butter Beans. I like to use fire-roasted vegetables in place of fresh spinach. Whether you make this as a meal or a side, it is an amazing dish. It's also a delicious fiber-rich meal!

INGREDIENTS
(2) 15 oz cans butter beans
1 1/2 cups Fire-roasted squash,onions, bell pepper
2 cups fresh baby spinach leaves
1 Tbsp unsalted butter
1 small onion
3 cloves garlic
1/2 tsp Kinder's The Blend
1 tsp crushed red pepper flakes
1 tsp smoked paprika
1/2 tsp oregano
1 tsp dried parsley
1/4 tsp onion powder
1 to 1 1/2 cups chicken bone broth
1/4 cup grated parmesan
1/4 cup heavy cream
Fresh basil

I might try this with lima beans I grew and have in my freezer, but will have to omit the red pepper to add to my dish at the table - my husband doesn’t like the heat. Haven’t seen the fire-roasted veggies at Costco but I’ll look. In the meantime, I’ll sub fresh veggies and a touch of smoke flavor. The whole thing looks just delicious! I can see making a meal of it just as it is but I think adding some smoked sausage would be very good, too.

For anyone else scratching their head: "butter beans" are apparently what people in the US South call lima beans. Where I live lima beans are $2 a can and butter beans are $5 a can, because the latter are an organic brand imported from the US.
I’m from the South (Texas) and we call them Lima Beans. But, whatever you call them, they’re delicious!
Okay, now I'm from the Midwest and we call the smaller green version of this bean a lima bean and the larger creamy colored one a butter bean. Is the difference just a regional thing? It's interesting how the same foods are known by different names.
Lima beans and butter beans are different to me. Plus, lima beans are green and butter beans white like these in the video.

It's just the way that they're cooked (unless the mix used has hot peppers i.e. jalapenos/serranos in them). Check the ingredient list on the back of the bag before purchase.
