after taking the shrimp out, I think taking the tails off and chopping in half would be beneficial for when eating so its bite size and you don't have to deal with shells. I will 100% try this.

Also love that tip that the bacon can go on a cold pan- this makes total sense but I don't think I've ever tried that before!

I've been watching More Seasoning since you have started and it really inspires me to do something like it. I'm a mom of 2 boys and they love to see "a cool dude UA-camr" (my 7 yr old says you look like a dj), cook so thanks for sharing the love and creativity of cooking with my little family :)
Directions (from what I understood): Roast a head of garlic wrapped in aluminium foil with a few tbsps of avocado oil at 400 for 35min. Squeeze 1/2 of the cloves in a bowl. Preheat oven to 350 degrees. Mix 1/2 tbsp of flour with 3/4 cup of parm. Divide into 6 mounts and bake on a baking sheet lined with parchment paper for about 12min. Heat a 2 tbsps of avocado oil in a pan and sweat 1/4 diced onion, 1/2 diced shallot, and 1/2 celery rib (white removed) on low heat for 8-9min until onion is translucent and celery is soft, stirring every min. Add the smashed garlic with 2 tbsp of chopped parsley stems and 1 bay leaf and cook for 1 min. Add 1/4 cup of white wine, cook until almost evaporated, about 3 min. Stir in 1 cup of chicken stock. Make sure nothing is stuck to the pan. Let it come to a boil and add a slurry (1/2 tbsp cornstarch mixed with 1 tbsp of water). Add 1 cup of heavy cream. Keep on medium heat until the sauce has reduced by 25%, about 5 min. Turn off the heat and add 1/4cup of parm (??? I’m guessing he should have added it here) Purée the sauce using a hand mixer (optional) and run the sauce through a sieve. Keep it aside. Boil 1/2 lb of cavappati pasta until al dente (6min). Cook 4 pieces of bacon until crispy. Set aside on a plate with paper towel. In the bacon grease, cook 1/2 lb of shrimp 2 1/2 min each side. Set aside. In the same pan, put the pasta and cream sauce and let it come to a boil. Add 1/2 cup to 1 cup of grated cheddar and 1/2 cup of grated fontina. Add bacon, shrimp and pepper/salt if necessary. Serve it with the parm crisps and chopped chives.

Accurate! Yes, I should have added the park after the cream sauce reduced! And you only use a quarter of a white onion!
