I make salmon all the time but I feel like I just learned so much. I’m excited to try it this way! I’ve been loving the 101 series. I’m the only one in my family that cooks so i didn’t grow up with the knowledge for simple things like this. It’s been a game changer to watch these videos! You’re awesome, thank you! 😄

I've always watched Jaclyn solo but my husband and I thoroughly enjoy watching your videos together (it's rare we love the same thing). He was so excited you did the one on steak (he's always struggled) and I can't wait for him to see this one because salmon is our current favorite to eat.
Side note: didn't know this about the different pans so that is awesome to know! Super helpful. The pores on a face are opposite though: the heat opens a pore and the cold closes it 😉 so I'll have to try and remember the opposite here.

Thank you so much for this video!!! I followed and adapted your guidelines for my salmon bites recipe tonight. I improvised the sauce as I didn’t have white wine (sub with apple cider vinegar), fresh garlic (sub with minced garlic from a jar), fresh herbs (sub with dry herbs), and a fresh lemon (sub with lemon juice). It turned it delicious anyway! My 16mo son had 3 servings of it LOL! I would love a video on how to make basic sauces for different types of dishes (like chicken, pork, steak, fish, pasta) with ingredients everybody has in their pantry (flour, corn starch, dried herbs/spices, brown sugar, oils, vinegars, etc).

The thing about the stainless steel pan was very informative I knew this cause my ex (who’s also my daughters dad) is a chef we were together for almost 4 years and I learned a lot, and the whole it’ll make you a better chef ABSOLUTELY AGREE! Being patient with your food is KEY! Making a meal and using scratch recipes is definitely an art and if you aren’t patient then you might have to either scrap the meal and start over OR try to redirect the recipe to work a different way making something else entirely!

I've always baked salmon because it's easier to pop in the oven and walk away for a short bit to do other things. Also, I rarely have the money to buy fish-counter-fresh fish, and I'm not sure if frozen salmon will taste good enough to pan-sear. I've never been a cook, really, but your videos are SO motivational and you explain the science in a quick, succinct sort of way (as opposed to Alton Brown who is great but tends to go on too much) and I appreciate you for it.
