I literally loved this recipe so much I'm adding it to my recipe box as a go-to for myself and for when I have company over :) Egg Bake for All Occasions Ingredients: 8 Hash brown Patties 1 lb pork sausage 5-6 strips of bacon 1 Green Pepper 1 Red Pepper 1/2 White onion diced 1/2 C. mushrooms cut up 5-6 springs green onion diced Spinach Sliced cheese shredded cheese Casserole Egg Mix: 8 eggs 2 C. whole milk 1/2 C. half and half 1 tsp garlic powder 1 tsp smoked paprika 1/4 tsp cayenne 3 big pinches of salt 30 cranks of black pepper Directions: 1) Line your baking dish with hash brown patties and set to the side 2) Place bacon in the over at 400F for 15-16 minutes, or until bacon is crispy 3) Dice up 1/2 of the Green Bell and 1/2 of the Red Bell Pepper and set aside in a bowl 4) Dice up white onion - set aside in a bowl 5) Dice up mushrooms - set aside in a bowl 6) Dice up green onions - set aside in a bowl 7) Once bacon is cooked and crispy, take one strip of bacon, chop it up and place in the bowl with the green onion 8) Take the other strips of bacon (~4-5 strips), dice up - set aside in a bowl 9) Combine all ingredients for "Casserole Egg Mix" in a big bowl and whisk (see ingredients list above) 10) Now that all prep work is done, fry the pork sausage in a pan be careful not to overcook (rest assured it will completely cook once it's baking in the oven) 11) Place pork in a separate bowl and without removing any grease, put bell peppers in the hot pan to sauté 12) Once the bell peppers start to soften up (~2-3 minutes) add in mushrooms & cook for another 1-2 minutes 12) Add white onions in with peppers & mushrooms and cook for another 2-3 minutes (until starting to become translucent). At this step add in a couple pinches of salt & pepper for added flavor. 13) Go in with a handful of spinach and let cook with other veggies until they've withered & softened 14) Take sautéed veggies and add them into the bowl with the cooked pork sausage and mix it altogether 15) Take your hash brown layered pan and spread evenly1/2 of the sausage/veggies mix 16) Take the bowl of 4-5 chopped up bacon strips and spread evenly on top of sausage/veggies mix 17) Add 6 slices of cheese (can do all American sliced cheese, I chose Colby Jack from the deli and it was also amazing) 18) Spread the other 1/2 of the sausage/veggie mix on top of the sliced cheese ensuring it's spread evenly 19) Top the whole thing off with about 2oz of shredded cheese (either freshly shredded or store bought shredded cheese) 20) Take the Casserole Egg Mix, whisk one more time and carefully/evenly pour over the other ingredients in the pan 21) Put in the preheated oven at 350F for 30 minutes 22) After 30 minutes cover the pan with aluminum foil or a baking sheet and cook for another 10 minutes 23) Once it is done cooking, take out and garnish the whole thing with the green onion/bacon mix 24) Eat the whole thing in one sitting & enjoy! ;)

Egg casserole *Prep for night before -Oil up a 9x11 pan and line w biscuits I cook the biscuits until they’re slightly golden brown- don’t cook all the way -1 bag Seasoned shredded potatoes ( I get the refrigerated unseasoned and season w/ salt, pepper, garlic powder, onion powder, paprika, and ground red pepper) cook thoroughly and add directly on top of biscuits -cook hot sausage and/or bacon, onion and pepper and put on top of potatoes -whip and pour 12 large eggs over top - lastly, add 1 Bag of shredded cheese. (I use Colby Jack or sharp cheddar, but whatever you prefer) - Let sit in the fridge overnight - next morning bake for 45-60 min on 325F and enjoy!

This is the first recipe I’ve made. I added broccoli zucchini instead of mushrooms and spinach and added kielbasa to the sausage. Wifey loved it.

Probably oat milk will work better or cashew they are richer creamier “milks” and not as sweet as the other two or overwhelming in flavor.
