I made these from Christmas with my granddaughters. I've made them since childhood. The flavor was spot on. But they were so dry. I baked them at 350 degrees for 15 minutes. Golden bottom. The only thing I didn't do was chill the dough before baking. Do you think that's why they were so dry? Thank you, I'm new to your channel. I really like how you explained things. I call these by the name Mexican Wedding cakes.I substitute walnuts ( toasted)& they just melt in the mouth, a favourite on my Christmas tray for years.Anyways a variation with pecans will be nice too.
I've been making these cookies for decades as the favorite Christmas cookie in our family. My recipe is pretty much the same but I have a couple of differences in how I do them. First, I do use my mixer to ensure I beat the butter with the vanilla and sugar until light and fluffy. I mix the flour and salt next until fully incorporated but not over worked, then stir in the chopped nuts just until they are mixed throughout the dough. I use a cookie scoop to form the cookies, but avoid packing them tight - I used to roll them by hand, but found they came out too dense, not light. I started getting best results when I avoided over handling the dough. My mom made these every year when I was a girl, and to me these cookies are what Christmas tastes like

Bake at 350 about 15-20 minutes. Watch the bottoms of the cookies to be golden brown and the tops light tan. If you look for the tops to get golden they could get over baked. This recipe will make about 3 to 3 1/2 dozen cookies and is easily doubled if you want more. I hope this works well for you. 🤶🎄
I have a recipe that I love and they are delicious but I only make them sparingly because my recipe is extremely tedious. Your way is definitely so much easier. I am going to try your recipe and hope for the best. I will let you know the outcome. 😬
The first powdering while they are warm melts the sugar onto the cookie, they are a little sticky then. Allow them to cool completely and then powder them one more time. The 2nd powdering will hold to the cookie but stay light and powdery.
