This is why the food is so great in Italy. They continue to follow practices developed over decades, not giving into the "easy" path using commercial or processed ingredients. Hard work, but this level of craftsmanship and dedication results in incomparable products.
This is very true. There's almost nothing you can get in Italy that you can't get elsewhere in the world - but so much of it just tastes so much better. They prioritise quality and process over profit.

Damn over 1 hour long porkumentary. It's definitely pork o'clock. The Italians are even more meticulous and scientific about how they roast their pork, more than the Filipinos, Chinese, Balinese and Puerto Ricans even. They even suck out the pork drippings with a vacuum - insane. Everybody, please like and get this to 1 million views so that this lovely family can get the recognition they deserve.

I couldn't resist commenting I'm only 9 minutes into the video and wow this is absolutely amazing! This video made me feel something from my childhood when I used to live deep in the Bavarian alps and my dad & grandpa and they would have this yearly pork roast in a barrel tradition for the whole village, it was amazing. If I ever meet you one day I would give you a big hug for making the most amazing videos that you simply cant find anywhere else in mainstream media. I really hope you do more videos in Italy and go deeper into their history, you've given me so many bucket list places I plan to visit thanks to your videos so thank you so much! What a magnificent video this was, a piece of history documented for all time. This is why Italian food is so special. No shortcuts, just time honoured methods to make exquisite produce. Tastes so different and so much nicer than mass produced. I was lucky enough to purchase a salami from a producer on a recent trip and it was absolutely sublime.. a different league entirely from supermarket fare. Please make more of these Harald

The pride these guys have in their work is amazing to see, you really don't see that in many places these days. I think it is the fault of the corporations though, not the people, this business truly being family run allows them to preserve that pride, but when a business sells out and it all becomes about maximum efficiency, the workers end up being treated like machines and they lose the pride.

Harald this is like a dream come true! I fell in love with the taste of porchetta when a young very passionate guy from Verona opened a restaurant here in my hometown in germany. I walked into his little restaurant to see what they got and ofc he recommended me to try the porchetta sandwich. He makes everything himself, the bread, the porchetta and even the pasta. I love the dedication to the craft behind making this extremely delicious food. I've been so curious to look behind the scenes and whatched many other "making of" porchetta videos. I know you made a video a long time ago when you had a horse meat sandwich near the train station but it was nothing compared to what you did now here to honour the pork. Just to give you some data. Im sitting here with my daughter whos 8 watching this episode and she said nothing about the pigs. She thinks its interesting but as soon as she made out the head even though its blurred she yelled “oh my i saw its face!!!”
