I was happy to find both curry leaves and baby aubergines at our local Asian market in Seattle!! This was so delicious and the texture of the eggplants with the peanuts was perfect.
This looks amazing... I've made Makdous, which is stuffed and pickled, baby aubergines. I grew some this year and was attempting to create a hearty fall dish, rather than pickling the whole darn lot. Then I thought "Hey, I should look up Chetna's channel". Wow, exactly what I was looking for...! You rock Chetna...
I made this Saturday evening and it was up there as one of our favourite curries. Made it vegan with Oatley yoghurt. And finished it off with a squeeze of lemon 🍋. Thanks Chetna. Love your recipes and your books. X
Looks really nice, Chetna. I think there's a Maharashtrian dish that's similar. Similar ingredients to the Burmese pot sticker one you showed us last year. I tried that recipe exactly as you said, and then a second time with less elaborate cooking. Both were nice. If you had the same bunch of ingredients and had to choose one of these recipes, which would you go for?

Aubergine is one of my favourite vegetable. Very nice dish Chetna. I will give a try to your version (especially by adding the masala). I use different spices but I too add the peanuts. Anyways thanks a lot for the recipe Chetna 👍🤗😊
FYI the spice mix can be used to cook the tomatoes. Then use chopped aubergines and also potatos once the tomato mix has thickened. Just as delicious. Can also use courgettes instead stuffed or in pieces. Use extra toasted peanuts and crushed roughly
I tried this with „regular“ aubergines, cut them in half and then the crosses on each half. Worked perfectly too!
