I just made this, it was really yummy!! However, I did make one mistake: I added yogurt at the end instead of coconut milk and the yogurt split XD Next time, I'll stick with the coconut milk, or add the yogurt at the very end. Thanks again, I am going to get your cookbook for my sister for Christmas :)

Thanks for this recipe..I will definitely give it a try. Just one thing..I'm not a big fan of frying thE eggplant but I could roast it or just mix it in with the rest of the currey and add the coconut milk?..just wondering how much this would alter the taste?..ThankS again😚❤
you can make this curry with potatoes if you dont like eggplant
Hi, I know this is an old video but you definitely can pre roast the eggplant. I love brinjal curry and discovered a recipe online about 2 years ago where they roast the eggplant beforehand and it still works perfectly. Just be sure to drizzle with oil and salt plus other spices if you’re using any before roasting. Only takes about 20 minutes in the oven to roast it. 🙏🏽

Try cutting the aubergine in thin slices and oven bake with touch of oil. Then make curry.
I tried auborgine Indian style from a super market and I was pleasantly surprised,I'd definitely make this.

Thx for this recipe! I've tried it and it was good, but not so good I expected, because it tastes bitter. I learned this comes frome the fennel seeds which are in the panch phoron.
Yes the seeds in patch poran can make it bitter, you can try and cook it with just cumin seeds next time and it wont be bitter at all.
how do you keep your hands so clean whenever i cook anything with tumeric in my nails go bright yellow and my hands for days i can never get it out. urs look nice and clean what am i doing wrong?
Rub some vegetable oil on your hands first

Chetna, not seeing the list of spices in the description box. Please include, I'd love to make it.
Panch Phoran is a mix of 5 spices as Panch means 5. It includes Brown mustard seeds, cumin seeds, fennel seeds, nigella seeds, & fenugreek seeds. You can take equal quantities of all but take less of the fenugreek seeds as its very bitter, so for e.g. you can take 1 tbsp of all but take 1& 1/2 tsps of fenugreek seeds. Mix all & store in a bottle.

@@alichea5423 Panch Phoran spice mixture is used to temper Bengali dishes in India. It adds a special zing to the recipe.
How would i adjust this recipe to make traditional Punjabi Bangan Bhartha, not a "curry " version?

Sorry to be a nuisance. there is a referral to the "panch phoron" in Chai Chaat & Chutney, (great book ) but it doesn't list the amount of each spice to make the mix and I don't want to hazard a guess and get it wrong. Could you please help ? I've made a lot of your recipes for the family who are now eating Indian food at least 2 times a week and keep asking for more...and so far, your recipes have been a winner every time .👍👍👍👍👍😁

Vegan recipe...but not really that healthy... deep frying aubergine soaks up oil like a sponge!
I never said this was a healthy recipe, I just said it was vegan. There are loads of other healthy recipes in my books and here on the channel too

Chetna didi, if you will put a wet kitchen towel underneath your cutting board, it will prevent it from jumping around like it did in the video. Great vegan recipe!

Its a combination of five spices, you can buy them together, its a spice mix from Bengal in India
