      I’m from New Orleans I live in Metairie. Drago’s was The inventor of charbroiled oysters. He came out with that recipe in Metairie 20 maybe 30 years later he opened up a restaurant in New Orleans. Which is only 3 miles away. Just giving a Quick brief history. Lol

    Made this tonight and O my gosh did they taste amazing !
    It was my first time making oysters and I’ve been to Dragos 3-4 times, these were the same!
    Next time I will use less garlic as a personal preference, thank you so much for explaining this so well 😊

    Just steam them for 5 mins to get them open and then half shell them for the grill, way easier and no shards of shell. Also don't unhook the muscle of oyster, that way they won't fall out of the shell into the grill.

    I'm a firm believer that if you're going to put any sauce on an oyster, it should be good and simple... this one looks perfect! I love the idea of throwing them on the barbecue... gonna try this one soon! Thank you for the video!

    I’ll say, I AM convinced ACME in Metairie is a better atmosphere than Dragos in Metairie. Dragos MIGHT have a better look/flair. But ACME is my “Go-To”

    Looks delicious! I am a little apprehensive about sourcing Oysters in Chicago…so if you have any recommendations that would be great!

      Hi Chris! My go-to for fresh oysters (and all other seafood) in Chicago when I lived there was always Dirk’s on Clybourne Avenue. Are they still around?

    I use nylon block to shuck the oysters, and save the liquid, filter through coffee filter and save. then scrub the lower shells and rinse each oyster with salted water in a collinder to remove all grit.
    Place oysters into cleaned shells and add garlic butter and 1 tsp. of Absenthe, top with cooked spinach, put on charcoal grill and pour the salty filtered oyster liquor onto each oyster shell to fill them up and then cover each oyster with Romano..
    Barbecue grills are hotter then gas grills and the oyster shells can make popping sounds when almost done.
    Gas grill has longer cooking time in order to brown edges. I put a sliver of lemon with the rind on each oyster and serve with a hot crispy Baguette.

    How long would it take to cook them without a lid? I grill over a pit with charcoal and oak.

      Hi Kenneth. I doubt the cooking time would be much different - i'm sure you're running a good hot clean fire. For me closing the dome is more about capturing additional smoke flavor.

    4:37 oysters from the Gulf Coast is the best, plump and briny. Ive had east coast oysters and was not happy.

    How do you store the unused oysters? Also how long can they be stored?

      Good recommendation would be putting them toward the bottom of your refrigerator since it’s typically the coldest point. You can typically keep them up to 1 week but this also depends on how fresh your grocery store obtains them.

      Don’t store oysters.
      Pick up fresh oysters.
      Go home and cook them. If there’s any leftover then you need to work on a better recipe.
      Fresh is key

      Hahaha I see what you did there! Salmon would do well - I would put them in poaching cups (you can get disposable aluminum ones on Amazon) and put cubes of fish in a fish stock or lightly salted water in the cups. If you want to keep it original, rumor has it that Tommy adapted the recipe from his old grilled redfish dish - so if you can find that where you live try it! Thanks for watching Andrea.     Dragos does not use butter... I wish I could show you the pictures I took of the tons of palletized margarine outside of Dragos kitchen.. 800lbs/per pallet. Must have been 20 pallets. So NO BUTTER .

    Oysters and bivalves are probably the only animal product that should be considered compatible with vegan diets. They are meat plants. And super good for the environment. Super woke making this recipe

      Many vegans eat oysters because they don't have nervous systems and therefore don't feel pain or emotions. I eat oysters because they are delicious!

    My recipe is simple.
    I first saute and caramelize very finely chopped Vidalia Onion and Garlic and set aside.
    I render down some decent bacon till its crispy and chop it up into very small crumbs and set aside. I lay my shucked oysters onto a sheet of crumpled up foil which I pull back apart so when I lay my oysters down, they will sit level and not loose liquor . I then put a little 50/50 mix of creamy butter and olive oil.
    Then I put a little of the bacon,garlic,onion and finely chopped fire roasted bell pepper into the oyster cup and use 3 more ingredients. A small amount of dollop of
    Hellmanns Roasted garlic sauce, Tabasco Smoked Chipotle and sweet and spicey sauce. Let the oysters grill until there done. But, 1 minute before they are done, sprinkle some freshly cut green onion for crunch .
    I am addicted to this oyster recipe. I didnt use any cheese . It doesn't need it
    Try this.I would be very surprised if you dont like it.

    I stopped at cheese! If you have to cover your oysters in cheese you obviously don't like the taste of them.

      Hi Lamberto. Do a test for yourself - first do it your way, then spill some of the sauce into the hot fire on the coals and see what the difference is. I think you'll find that when those fats hit the coals it produces some amazing smoke flavor that you can taste on the food. Either way, enjoy!

    My comments are kind of tongue in cheek but I do have a AWESOME
    grilled oyster. It does not have a heavy cream consistency.
    Clean finish. Beer pairs well.
