Wonderful video!! Thank you, sweet lady! I never allow water to be on my iron skillets either. After cleaning the food out of them (without soap, if avoidable) I always set them on the hot stove eye to dry for about a minute. Also, doesn’t the little bit of sugar help the bread to brown? I remember my grandmother telling me that. It also gives just the right about of sweetness. Imma try this recipe tonight:) Bless you for blessing others!!

I was really hoping you'd cut a piece so, I could see the texture of it, It sure looked good. My Granny was the Queen of cornbread, she used hot bacon fat, she'd pour it right into her batter and into a hot skillet, into her oven. My Granddaddy would pour buttermilk in bowl and place a slice right in and mash it together right at table, he loved it. He was born in the late 1800's he had a lot of ways about him that were very different, I learned a lot from him. My days in Jefferson County Alabama were filled with good eating and good kind people, I've never eaten better, everything was made from scratch, peach preserves, apple jelly, eggs from the coop. I used Alaga syrup on my biscuits that was one of the only store bought things i remember other than flour, sugar and coffee those kinds of things. It was a good time, i'm grateful to have experienced what i did. I have great memories of a time faded.

Wow! 5 eggs? I am over 80 and never heard of more than 2 eggs for 1 recipe of cornbread...and never put in sugar. That's more like yankee cornbread. Just as soon make a cake. I also use bacon drippings for the oil in my cornbread. Most Southern cooks keep that container of bacon drippings for seasoning all the peas, beans and other veggies. But Mae Mae, you know what you are doing. I'm sure that cornbread is delicious!

Oh, My Soul!!! Here I am in my kitchen, minding my own business, making your egg bread/cornbread to make my dressing. I took the cornbread out, and my husband about had a fit! Lol. He HAD to have a piece slathered in butter. I wasn't planning on eating it, but saving it primarily for my dressing. He walked into the family room, grunting in pleasure inhaling the cornbread, and captured the attention of our son. Well, you know what happened...he ate a hefty piece as well! I've had to hide it. I am not ashamed. I nearly had to get out the fly swatter and threaten them with bodily harm. Needless to say, it was a big hit in my true southern kitchen! Thank you so much for taking the time to share your special soulful southern recipes with the rest of us. I am going to get the turkey wings tomorrow to make your awesome looking broth. My grandmother used jiffy mixes exclusively in her last few years of life. She had a cupboard full of them she used the cornbread mix the biscuit mix the muffin mixes the cake mixes and frosting mixes because she lived alone and only wanted a small amount that one box would provide. If we were all coming for supper or to visit she would just increase the mixes and I have to say that they are delicious especially the cornbread mix! I keep some in the house and the honey cornbread jiffy mix for when and if I run out of self-rising cornmeal mix. Many many people have rediscovered jiffy mixes and that makes me happy because of my grandmother. :-)

Great video Ms. Mae Mae! I love using buttermilk when I make cornbread but I can never find whole buttermilk anymore. I always use a cast iron skillet to cook my cornbread.
Growing up, in a large family (10), sometimes all we had for supper was corn pon and buttermilk. Dad used to call it Hillbilly cereal. Crumble up the pon in the milk a little pepper. Love it!!

I like that you add self rising flour and sugar to your cornbread. I dont like dry grainy cornbread and I always always use my cast iron skillet when making my cornbread. I will try the buttermilk next time. Currently I use heavy cream, sour cream, and a stick of melted butter. If I can use the buttermilk instead and it still turns out moist I'll be stoked! I started baking at 6 years old and Baker's always need to adjust. It depends on many variables like the weather the humidity the age of ingredients etc. No recipe no matter how well measured works the same every time sometimes you need less liquid sometimes you need more liquid sometimes you can't make egg whites like meringue or divinity when it's raining and that's a true thing it is not an old wives tale! :-). If anybody cares I use House of Autry self-rising cornmeal mix and it is yellow. I just love the flavor so I order it online because I live in Maine.
My mom and my daddy (who is deceased) are from Mississippi and I've never seen cornbread cook called egg bread. Now they do use either HEN or DUCK. but I will try your egg bread. Ive been wanting to try my first dressing for Christmas. Now I know how to cook but even with my mom and aunts directions my dressing is just not right. So I'm hosting Christmas this year, I'm going to do this as a trial run with my children between Thanksgiving and Christmas. I hope it come out right. Ive watch both this cornbread video and dressing video at least 10 times. I will get it right.

Your Mama was right about food sitting in an iron skillet! When it sweats it tastes like iron! I'll try this some time. When I was young we were so poor my folks made stone ground cornbread using a large caste iron skillet. They didn't even use an egg. It was crumbly but it was good one time, the day it baked with melted margarine.. It lasted nearly a week for us. We had various kinds of beans with different vegetables, salads or plain onions-green or yellow. The best part of being raised nearly completely vegetarian is that my blood pressure has never been high until only occasionally in the 140s and once the 150s. Im overweight but not diabetic. Thank God for that and the powdered milk we drank! But the whole ground corn had a taste cornmeal today don't taste like. 70 years old...

I haven't seen self rising corn meal, so is it alright to use regular yellow corn meal and put baking powder in it if I can't find the self rising kind? Also I have never used white corn meal. My mother always used yellow, is there a difference? I truly liked how you took your time to explain in this video and the wisdom you share. Yes my grandmother always said to use extra eggs for nice cornbread! Even if you use jiffy mixes to make corn muffins or cornbread use two mixes and three eggs. The eggs always make it nicer. :-)

I noticed that you use a handheld timer in your videos and on a previous video you told your viewers to invest in a timer? My question is why don't you like to use the built in timer on your pretty stove? Is it broken?
Wow these Videos have been really really helpful To me and my 18 year old daughter I'm Kind of embarrassed to say I will be 40 in a couple of weeks🙏🏾 and I am still learning how to cook🤫 When I make so food to me it's a hit-and-miss but of course my husband and children absolutely love it, Now secretly I know that It don't taste like mom's auntie's or Definitely not like grandma's used to🤫 But just so you know I love all these tips you make me think of my grandma and Please don't stop talking when preparing your food it also reminds me of my grandma. I like how you just sit and actually do it all step-by-step instead of going off camera to stir food you stir it right there I absolutely love it thank you so much. Shelia k. Harris you can use whole milk. And you can leave out the sugar. My mom was a great cook and I patterned my self after her but I changed the habit most of our moms and grannys had of putting a little sugar in everything. It’s healthier and just as good. She had a cupboard full of them she used the cornbread mix the biscuit mix the muffin mixes the cake mixes and frosting mixes because she lived alone and only wanted a small amount that one box would provide. If we were all coming for supper or to visit she would just increase the mixes and I have to say that they are delicious especially the cornbread mix! I keep some in the house and the honey cornbread jiffy mix for when and if I run out of self-rising cornmeal mix. Many many people have rediscovered jiffy mixes and that makes me happy because of my grandmother. :-)

Great video Ms. Mae Mae! I love using buttermilk when I make cornbread but I can never find whole buttermilk anymore. I always use a cast iron skillet to cook my cornbread.
Growing up, in a large family (10), sometimes all we had for supper was corn pon and buttermilk. Dad used to call it Hillbilly cereal. Crumble up the pon in the milk a little pepper. Love it!!

I like that you add self rising flour and sugar to your cornbread. I dont like dry grainy cornbread and I always always use my cast iron skillet when making my cornbread. I will try the buttermilk next time. Currently I use heavy cream, sour cream, and a stick of melted butter. If I can use the buttermilk instead and it still turns out moist I'll be stoked! Just found your channel tonite. I love cornbread, my whole family loves cornbread. Some put it into a glass an pour milk over it and eat it this way. i wish you would of put your ingren. in the bottom of your video. Sound great an would like to try an make it. I started baking at 6 years old and Baker's always need to adjust. It depends on many variables like the weather the humidity the age of ingredients etc. No recipe no matter how well measured works the same every time sometimes you need less liquid sometimes you need more liquid sometimes you can't make egg whites like meringue or divinity when it's raining and that's a true thing it is not an old wives tale! :-). If anybody cares I use House of Autry self-rising cornmeal mix and it is yellow. I just love the flavor so I order it online because I live in Maine.
My mom and my daddy (who is deceased) are from Mississippi and I've never seen cornbread cook called egg bread. Now they do use either HEN or DUCK. but I will try your egg bread. Ive been wanting to try my first dressing for Christmas. Now I know how to cook but even with my mom and aunts directions my dressing is just not right. So I'm hosting Christmas this year, I'm going to do this as a trial run with my children between Thanksgiving and Christmas. I hope it come out right. Ive watch both this cornbread video and dressing video at least 10 times. I will get it right.

Your Mama was right about food sitting in an iron skillet! When it sweats it tastes like iron! I'll try this some time. When I was young we were so poor my folks made stone ground cornbread using a large caste iron skillet. They didn't even use an egg. It was crumbly but it was good one time, the day it baked with melted margarine.. It lasted nearly a week for us. We had various kinds of beans with different vegetables, salads or plain onions-green or yellow. The best part of being raised nearly completely vegetarian is that my blood pressure has never been high until only occasionally in the 140s and once the 150s. Im overweight but not diabetic. Thank God for that and the powdered milk we drank! But the whole ground corn had a taste cornmeal today don't taste like. 70 years old...

Thank you MS. Mae Mae for helping me with your egg bread/ corn bread. I don't have a cast iron skillet, so I'll have to use an oblong pan. I haven't seen self rising corn meal, so is it alright to use regular yellow corn meal and put baking powder in it if I can't find the self rising kind? Also I have never used white corn meal. My mother always used yellow, is there a difference? I truly liked how you took your time to explain in this video and the wisdom you share. Yes my grandmother always said to use extra eggs for nice cornbread! Even if you use jiffy mixes to make corn muffins or cornbread use two mixes and three eggs. The eggs always make it nicer. :-)

Will the buttermilk affect the taste of the dressing. When I am making cornbread for dressing I usually use regular milk.
After this is bake, could you just serve it as regular cornbread for a meal? Seems like it would be very good.

Wow these Videos have been really really helpful To me and my 18 year old daughter I'm Kind of embarrassed to say I will be 40 in a couple of weeks🙏🏾 and I am still learning how to cook🤫 When I make so food to me it's a hit-and-miss but of course my husband and children absolutely love it, Now secretly I know that It don't taste like mom's auntie's or Definitely not like grandma's used to🤫 But just so you know I love all these tips you make me think of my grandma and Please don't stop talking when preparing your food it also reminds me of my grandma. Shelia k. Harris you can use whole milk. And you can leave out the sugar. My mom was a great cook and I patterned my self after her but I changed the habit most of our moms and grannys had of putting a little sugar in everything. It’s healthier and just as good.
