Have you tried using the free User Switching plugin? You can switch to the customer and checkout "acting as them". See here:ua-cam.com/video/hSTBMo1dKXI/v-deo.html

@@simongondeck No, I meant creating orders via REST API for entries coming in from Google Sheets

@@kevin_kk yes that is possible. You would watch the Google Sheet when a new row is added and then add the WooCommerce create order module to create the order.
