If you like non chunky spaghetti sauce and want a healthier and easier way to make tomato sauce read on. I prepare my tomatoes WITHOUT removing the skins. I cut them in 1/4s, remove cores and any bad spots then put them in food processor or blender, Puree till smooth, the skins too will be chopped too. This is where a lot of flavor is and lycopene. I then cook sauce down and add sauted garlic and onion and herbs to taste then cook down to consistency i like. I then process them using a hot water bath method.
My husband loves stewed tomatoes. This is the first year I tried canning them, they were a success. I wasn't sure what to put in them, so I just put celery, onion and bell peppers. Do you have a video on how to make and can pasta sauce? My mother hasn't pressure canned tomatoes for thirty years. Not even water bath. She has hot jars, lids and rings ready and puts boiling tomatoes in the jars. They ping within 2 minutes. She has never had a failure using this method. She doesn't put in lemon juice like so many people do. Enjoy your videos. Keep up the good work.

I didn't add any lemon juice or citric acid ever until last year when I was canning a lot because my daughter wanted to make her own baby food. I started just doing my broth and then went crazy canning. I was half way done with my tomato sauce when I saw all the instructions on adding it. So I added it to about a quarter of what I canned. I like it better without so I'm torn although I have never heard of someone having a problem and most Italian grandma's don't even do water bath with no problems.
I use my electric roaster each year. I can do large batches and get them processed a bit quicker. I use it for so many canning projects, lol. Thanks for your video.
My mother is so busy in the summer that she puts her tomatoes in the freezer until she has time to can them. When they defrost they release the excess water and you just pour it off. Then proceed with prepping and canning the tomatoes. They will be much thicker because you have gotten rid of all the extra water. That way you won't have a band of water in you jars.
She just puts them in a freezer bag and throws them in the freezer. If they are really large then just quarter them. When she is making juice she just uses a food mill to remove seeds and skin. Hope this helps.

They don't pop! Freaked me out the first time I used them. I enjoy the tattler lids for the tomatoes because of the acidity. But I find metal lids are ok too! I use Tattler up first for tomatoes, then the rest are metal. Thank you for watching :D :D

The only reason I pressure can tomatoes is because it’s faster. I quit water bath canning a couple years ago, when I got my steam canner. Tomatoes need to WB 45 minutes, so that’s too long for a steam canner
You lift them without the rings on. If they sealed you shouldn't be able to get the lid off by hand without using a butter knife or spoon to pry them off.
I recommend getting a cantaloupe / watermelon scoop to cut out the cores its faster and also takes out the core one shot less waist . just an idea from one canner to another canner lol

I canned thawed frozen tomatoes 🍅 and canned them in a water bath canner. I de bubble them. And after I processed them in the canner they had bubbles in them. Is that ok? They sealed right away. My tomatoes separated from the bottom. Are they okay or should I throw away and start again?
Yeah I won’t be using a pressure canner for mine either. It makes no sense- other tomato products ie) sauce and salsa are ok to water bath so what’s the difference???

When you thaw out the frozen tomatoes you will not have to scald them! The skins will slide right off !

They are perfectly fine! Some tomatoes release more liquid than others. Just shake it up before using.
