  • Today I am water bath canning tomatoes. There are many ways to preserve tomatoes. This is one way that I preserve mine. Be sure to use ripe, good quality tomatoes for canning.
    I am passionate about food preservation, canning, fermentation and dehydration. I also love gardening. I plan to share as much as I can with all of you.

      renata casiel Thanks! You can store your jars for up to a year. The ideal place is in a cool, dark, dry spot with temperature between 50-70 F

    I hot packed my tomatoes so I wouldn't get the water at the bottom of the jar. My jars still came out with the water at the bottom. Was I correct in thinking I wouldn't get the water at the bottom with the hot packing?

      You are right that is what is suppose to happen with hot pack. Less liquid. However like you I still get lot of liquid so I don’t bother hot packing.

      They will always have clear liquid on the bottom. You did nothing wrong.

    Thank you for sharing this video. I canned my tomatoes with your method and noticed the water turned a bit red. Is this okay?

      Christine Sanchez Hi. What happened there is probably a little siphoning. It happens that a little liquid leaks from your jars during processing. It may even seem that the liquid in your jar has gone down a little. As long as your jars seal, your tomatoes will be fine. I am canning green beans and my liquid will most likely be a little green😉.

    Why do I have to wait 24 hours to move the jars to storage?

      Hi! Great question. You let your jars sit to ensure a proper seal. After 24 hours you check to make sure your jars are sealed. Then you remove the rings. If you move your jars to quick it could affect the seal.

    Can you add peppers and garlic to this process?

      Hi. there are no safe recipes that I can find that have that combination. When you add garlic and peppers, you are adding low acids vegetables to your tomatoes so I would have to say you can`t add those to your tomatoes. I did fid a couple recipes that may be of interest. This first one does have to be pressure canned to be safe

      Hi. Its not recommended to skip lemon juice. Its about the safety. It ensures the acidity is safe. 😊

      NO!! You MUST add acid. Lemon juice (bottled only) or citric acid which is sold in powdered form (Walmart).

    When prepping jars, are they submerged?

      Hi. No they do not need to be submerged to warm them up. Only when processing. You can even use hot jars from the dishwasher!
