im not gonna lie, im REALLY loving the foraging and making top quality dishes out of what you can find. showing the little guy like me you dont have to be some super rich person or go to college for 10 years to be a chef to have good food and have a great time.

Back in the 90s we used to get people coming in all the time with their resumes that were virtually bare with the exception of some top school or another. We would flip them over and use them for our prep lists (the resumes, not the guy). The guy that walked in with no school but tons of experience was the guy we hired. You can train someone into a great chef - but people coming out of school had no idea how to work a professional kitchen and they came preset and hardwired. Like a toaster he (or she) could make beautiful toast as long as the bread came sliced. A guy (or whatever pronouns but back then it was almost exclusively males) with well-rounded experience understood that every kitchen is a brand new university. It's probably changed since then, but even now I believe EVERY good chef is first a teacher.

Bro. I watch tons of cooking shows, but your food looks by far the most delicious. There are so many chefs doing fancy things, but you do simple techniques with incredible ingredients and it’s just so satisfying to watch. Have no doubt this ramen was a true umami bomb

Looks bomb. When things get better after covid, I think it'd be dope if you did a series where you occasionally did private omakases with limited tickets. I'd totally fly up from socal. Maybe subscribers could participate in foraging and prepping meals to really experience and get a better appreciation of the content you put out.

Sitting down to dinner and I see there’s a new episode. Yesss! Start to get excited/weirded out as it goes on. My noodles are rice noodles, not ramen, but my broth has dried wild porcinis, smoked peppers from the garden, smoked feather boa kelp, and I have half a leftover crab on the side as accompaniment. No smoked fish, but there is some leftover roast duck that I raised so maybe on the same level? For once I watched a catch and cook with no fomo! 🍜
