Nice knife work on that cauliflower!👌🔪 Try this, take half the cauliflower and break into florets, simmer in water till tender. Drain and purée, adding cream cheese and butter. And don't spare the parma-reg!! Season and add back into the cauliflower risotto dish for a very silky sauce.

I am really enjoying your videos I think you’re fabulous Chef. You mentioned in the beginning of this video that Risotto is a complex carbohydrate. Not less you’re making it with brown rice and you do not use brown rice to make risotto. I am not Italian but I’ve always made my risotto with Arborio or Nano. Both of which are a short grain white rices. So, I’m a little confused if they are white rices how are they complex carbohydrates? I have to watch my carbohydrates because I am a diabetic. BTW, You are so funny.
