Gaucho Grill in Kalamazoo! I lived and attended university in Kalamazoo and now live in Manzanares, Argentina. I would love to hear more about your grills, and techniques, as I have firm roots in both places. Combining US style BBQ with Argentine asado is my nitch among friends, brings out the best of both worlds. I remember there were some incredible stainless steel grills being manufactured out of Kalamazoo back around the late 90s'. Taking it to the "gaucho" is really next level. Great content here. Love me a good ribeye. Your Gaucho grill is a little different that the much simpler grills I used in South America but the basic system is the same. Never saw that scoring techinque, will definatley try this.

I noticed that the steak was done chicago blue, dark brown outside almost black and rare red inside, the best way to eat that steak. By the way, I love the thickness of the steak cut, must been direct from the butcher shop (special cut 2 inches or two fingers thick). God video made me hungry too!

I could not see what is over your head, but it was obvious you were outdoors. MY observation also said weather was nice, beautiful day. However with such an elite cooking system, what happens in the event of rain?
Obviously you never had a steak like the one this guy just made.. That $10 BBQ can't even come close to what he just did on that grill.. It will melt in your mouth like butter!
Maybe a lot of flipping is good on a steak that thick but on a normal steak less than 1.5" from the grocery store I've found that high heat, flipping it once and letting it rest is key. I experimented a bunch of times trying to get a perfectly crusted medium.
Russ, this is the ultimate carnivore food p0rn. I never would have thought of using fresh thyme as a brush. Your outdoor kitchen is exactly what I've always wanted, especially your adjustable Argentinian gaucho grill, that is amazing. BTW: Who made your cutting boards? They are exactly what I've been looking for with the drip channel and the carry indentations on the sides.
These steaks make my mouth water. The steaks made at restaurants near me are always overcooked. I asked for medium rare not medium well. I never say this because I fear of getting a spit steak
