    My husband is a die-hard Heinz ketchup lover. I'm going to try this recipe to see if I can change his mind. Once again, thank you for sharing your knowledge!

      Penny Canfield Do some research heinze is loaded with toxic chemicals like mercury high fructose corn syrup and they only use 2% tomatoes.Homemade is way healthier.Thanks

      Penny Cainfield. There is an OP tomato that are the tomatoes that Heinz uses. " Heinz"

    The foam is not impurities and is not harmful in any way. People usually remove it because it looks better.

      Denise Canterberry you are correct. The only thing I skim is quince jelly, because you need that to look clear. I wouldn’t eat this sauce if you paid me! In Aust we have sweet sauce.....equal proportions, tomato, sugar, onions, vinegar, Granny Smith apple plus salt and spices, eg 6 cloves per pound tomatoes. He’s making and eating spaghetti sauce!

You're obviously better than the rest of us. But to be honest, apple's in ketchup sounds disgusting. Sounds like you really don't like tomatoes at all. Such a nasty comment. Smh.

    I watched your video because I'm about to can my grandma's ketchup recipe from when I was a kid and I wanted a refresher. I love how you said not to expect this to taste like commercial ketchup. You're so right! Homemade has a much more open fresh flavor than the salty vinegar taste of store-bought tomato ketchup. I'm excited to get back to work in my kitchen and recreate this savory memory.

    You guys are great. I love the southern accents and calmness in your voices. I am dying to live this life! Learning how to can food is a wonderful feeling. I have only done pinto beans and carrots so far but with all of the help from these videos, I am destined for some home-canned greatness!

    i leave the skins and seed ~ Just blend them in. It help keep the bright red color, and has more favor ! I put my home made past into it too

    People take for granted how long things really take to make. I spent 50% of my adolescent life on my grandmothers farm so some of these processes I have grown up with..It is very comforting to me to see them carried on.

    I'll never forget the first time I went to school, at lunch everyone was putting this red stuff on everything. I asked some one what it was and they said it was ketchup. I had never had store bought ketchup before. My Mom always made our ketchup.

    When you cook something down to get rid of the water and other things, it is called reduce.
    When you cook fats to get the liquid fat out, it is called render.
    I have a habit of mixing things up at times too.

    The "skimmen's" are not really "impurities" it is protein. not a big deal that you remove it just thought I would let everyone know what it is.

      I add a tsp of butter when making jam - haven't had an issue with "foam" since then

    Hi, I don't normally comment on your videos but love most of them. I am glad to see you use old commercial jars to store food. They are perfectly safe for most foods. I have been canning high acid foods in them for years with no problems also year after year I jar my Olives in them .. One thing to note it's not the jars but the lids that need to be in perfect condition.

    My wife made ketchup a couple years ago and surpassed anything from a store. The next batch she did was even better. Compared to homemade ketchup the storr bought doesnt seem to have any real flavor. Great video. Thanks for the new recipe to try.

    If you live in Mississippi I'm amazed you even have tomatoes this year with all the rain we've had. Here on the coast we had 23 inches in the month of June, and here at the end of July it isn't any drier. Everything we planted was ruined

    It’s very interesting to see how we all make our own family recipes to personal taste! Ours is much thicker, reduced by half- with much more onion and garlic. Thanks for sharing, I think I’d prefer yours for basting a meatloaf ect.

    I am following you on making ketchup for the first time . I only got 4 pints but I don’t care . I tasted it while it cooked and to me it was delicious. Waiting for water bath to start boiling and then 15 process . Thank you so much for all your info😀❤️

    I'm going to try this when tomatoes are going strong. I tried a ketchup recipe 2 yrs ago & didn't care for it. I do tomato sauces by putting whole clean tomatoes in roaster oven (like for turkey). I usually remove core. I'll leave on all night. In morning, I'll run thru food processor & food mill. So much easier for me than skinning & boiling down more. Then I switch to stock pot like you did to add ingredients & cook down. Roaster leaves a fair amount of liquid. I've added in or excluded & canned like a weak juice. It works fine for recipes that call for tomato juice in casseroles.

    Add some tomato past so you can stretch your yield or thicken more.

    1/4 teaspoon full of garlic powder for 20 cups of ketchup? I would be using a tablespoon at least. It does look great though. Thanks for this.

      Yes indeed , plus a bit more Vinegar too ... Now you're talking ...One thing I've learned to really like in my ketchup , here lately HEINZ has come out with a SPICEY KETCHUP , NOT TOO SPICEY , JUST TANGY , & I JUST LOVE IT , WHOO HOOOO.........

    Will be making this soon! Most of my tomatoes are still green, except for the cherry tomatoes (western NC). I've always been afraid to try ketchup. My 8 year old eats ketchup on EVERYTHING, so we go through a lot! Thanks for posting this!

    I'm getting about 200 to 300 tomatoes a day I'm running out of space plus I can't eat high fructose corn syrup but I love katchup. So with that said here I go I have a hundred jars to fill just for this, there goes my weekend. Thank you for this I love it.

    I watched this video and a few others including Chef John's. I kinda made up my own concoction based on your recipe and his because i didn't have as many home canned crushed tomatoes as you did but way more than he did lol. Tastes good warm and I put a dab in the fridge before I canned and as you did, I added a little more spice. Yummy!

    Are these tomatoes some of the ones you put in freezer first. Really want to try it. Wonder what it would taste like if you added a little molasses in it? Next on my list. Thanks for sharing.👍

    Looks fantastic! I love ketchup! I make fermented ketchup which is super delicious but the base is organic tomato paste. I'd love to try it starting with whole tomatoes. As always, y'all are inspiring and educational. Thank you!

      ChickenStamps We dont use store bought tomato paste after finding out that heinze only uses 2% tomatoes and mercury in its products.It takes a little while but it does cook down thick.Thanks

    Danny the word I think you're looking for is REDUCING, basically you evaporate the water out so that the real flavour is intensified. I re-use all sorts of Jam jars, if you put the liquid in hot to a hot jar and put a hot lid on to it you'll get a good strong seal. That ketchup will thicken even more once it gets cold won't it? Looks SUPER-YUM.

    strain off some of the juice , Found it save cooking time! i use starch to thicken it up! Saves cooking time as well I like mine spicy So i add cayenne pepper, jalapeno peppers or red pepper flakes to my taste ! Yes i grow my own tomato's! I blend them up skin seeds and all. with salt and cayenne pepper. Then put into plastic bags and freeze them until i want to make a sauce or ketchup ect. That the base

    Danny, you might try using a bulb baster to suck the stuff off the top of the tomatoes as they cook. Looks like you are going to end up with some really tasty ketchup!

    I just tasted a packet of ketchup from a fast food place. It has been 30 years or more since I bought a bottle of ketchup, but this packet tasted like syrup. Heinz, what have you done?
