One of my favorate things in Elder Scrolls is that pretty much all normal food, such as Bread and Meat, items give Restore Fatigue when combined with Alchemy. This means, canonically, a Potion of Restore Stamina can just be a liquid Ham Sandwich.
Morrowind with high enchant is another story too. I enchanted two rings to restore my stamina and any time I'm low I just top up with one of them. By the time one is empty, the other is full again. Potions are probably more, well, potent (pardon the pun milord), but the rings take less inventory space. Also yes, I keep rings and amulets to heal with too, and that's really only useful when my primary weapon doesn't just absorb health straight from enemies. Hands down most broken offensive enchantment because casting it back on you due to bad luck or an enemy's bullshit stats means you just absorb your own health, so nothing bad really happens.
