Old Fashioned Hummingbird Cake from Scratch - Simple Ingredient Southern Cooking

Tammy’s Hummingbird Cake
2 CUPS SUGAR
3 EGGS
3/4 CUP VEGETABLE OIL
1 TSP. CINNAMON
2 CUPS MASHED BANANAS
1/2 TSP. SALT
1 TSP. BAKING SODA
8 OZ. CAN CRUSHED PINEAPPLE (or larger can if you want to top cake with extra pineapple)
3 CUPS ALL-PURPOSE FLOUR
1 TSP. VANILLA EXTRACT
1 CUP CHOPPED PECANS PLUS 1/2 CUP FOR TOP
Mix sugar, eggs, oil, bananas, 8 oz. crushed pineapple
and vanilla well. Then add baking soda, salt, &
cinnamon. Add flour and mix on medium speed for 1 1/2 minutes. Add 1 cup of chopped pecans, mix until
just incorporated. (Do not mix over 2 minutes total
after flour is added). Grease & flour three 8” round
cake pans OR two 9” round cake pans. Add pecans to
the bottom of one of the cake pans, then bake all cakes
at 350 degrees for 35 minutes or until a toothpick comes out clean & the cake begins to pull away from
the sides of the pan.
Use the pecan-topped layer for the top. Ice cake
between layers and on sides with Cream Cheese Icing
(recipe on Page 106). (Do not ice the top of the cake).
Optional: Simmer the remaining pineapple with ½ cup brown sugar until it starts to thicken and use for top of cake.

@@CollardValleyCooks I was actuallly going to do that as a filling but decided not to because I wasn’t sure if the ladies at the party were going to like it so I omitted it. I made it in the past for a friend and she wanted the traditional cake. Now, if I were to just make it for my husband, then I would have made it with the pineapple filling. I do appreciate your demo. The hummingbird cake recipe is a gift from Jamaica tourist board to America, Ms Wigan’s added the cream cheese frosting in Jamaica it’s also known as a doctor bird cake. The doctor bird is a hummingbird which is the national bird. Hence the name.

WOW. Here in the U.K. I've never heard of Hummingbird cake. I love the idea of mixing pineapple with banana. I cannot wait to try making this cake as a two layer cake at first before getting too adventurous. I'll let you know the mess I get into !!!! But I also love the idea of using veg oil in the initial mix as opposed to creaming together butter with sugar. Guess what I'm cooking this weekend ?? Thank you for the inspiration and new ideas. Tammy! I grew up in MI, and my mom remembered the existence of this cake at some point in my younger teens! It became a staple at summer pool gatherings, but I haven't had it since I could say 'teen' with my age, and I got a little emotional at finding it!!

This is one of our favorite cakes. I make our cake like your except I ice mine with a cream cheese icing and cream cheese filling. Oh yeah my cake is two layers or your can divide the layers into 4 thinner layers. Your filling is different from mine but yours looks delicious.

I've made Cakes with banana, with pineapple, and with nuts but not all together. This recipe definitely says special occasion to me. I've got to try it especially since I've got so.e extra bananas in the freezer. Looks delicious.

Tammy I just wanted to say thank you for your banana pudding recipe the other day. My elderly dad isn’t eating much & he absolutely loved the banana pudding. We were all so glad to see him enjoy it. Also, hummingbird cake is my favorite. I bet yours is amazing!

I'm gonna make this cake but why are you freezing it? When I make a red velvet cake I don't freeze it and it tastes delicious with cream cheese in icing.
It can be kept for however long I wa t to wait to use it. Plus it is easier to ice.

Tammy, how many bananas did you use to make the 2 cups of mashed bananas in the recipe?? I have tidbits not crushed, so I'll have to chop them up in the small food processor. quick question. the above recipe in description box from website (print from) says mix shortening, butter until creamy and also mentions baking powder? it s called Tammy's hummingbird cake also the name in your recipe book. But yet its different. Also. on your video page the recipe say baking powder... no mention in recipe baking powder? why so many recipes to one cake mix .....i know there are many different recipes for this cake, but would like to get only one from your video. makes harder for someone new to cooking or baking what recipe to follow. Could you explain why the differences.

My stove broke about 5 years ago and living on a fixed income haven't been able to buy another one but if I live long enough I want to try and cook some of your recipes. Why is it called "hummingbird cake"?
Allegedly because it is sweet enough to attract hummingbirds. It originated in Jamaica in the very early 70's and became a favorite in the US in the late 70's.
