My Grandmother was famous in our hometown for making this cake. She did not use coconut extract but since she used fresh coconuts she would use the fresh coconut milk often. When the Birds Eye frozen coconut came out she started using it too. I am the only one in our family that learned to make her cake. I am going to have to try the cake you made today. My dad always said that he loved his aunt Della Mae's "Wet Coconut Cake" that she would make when they visited SC, and his dad would take her fresh coconuts from Florida. He turns 75 next week, and this looks exactly like how he has described Della Mae's cake, so you can bet I'm going to make it for him!

Well, they are both so very different and delicious. Mine is more of a fresh coconut taste, and this one is like a coconut candy. Both really are AMAZING!! I think this one is easier than mine because there is just one filling and no buttercream to make.

How about adding parchment paper on your turntable three or four pieces, frost your cake and then pull out the parchment paper so you have a clean turntable, I'm only suggesting because I've seen other chefs do this, and it does look absolutely delicious. Tam😋
That’s how my grandma taught me. I iced my cakes on my cake stand. Pulled all my (just torn pieces and placed them on my cake stand in a circular shape. Added my layer cake on top) pieces of parchment out when iced.

I have never tried that. The coconut has sugar in it so I would think you would have to reduce the sugar in the recipe for the filling by about 1/2 cup.

Just made this using recipe on your website and used 3 9" pans. It made very thin layers. Next time I will use 3- 8" pans. Delicious tho!

I have never seen frozen coconut. We have 3 grocery stores....Walmart, Hy-Vee and Festival. I'll have to call them to see if they carry it.

Often I would have my dad cream the butter and the sugar 😊. It was always fluffy 😅. Every thing was done by hand.
