My mother in law made this cake quite often. I’m in my late 70’s now but I still miss her bake goods. She was a wonderful southern cook. She made huge cat head biscuits and corn bread muffins fresh every day of her marriage. They never ate sliced white bread. Such a treat. 🥰❤️❤️🧓🏻Texas.

Thank you for this recipe. I remember as a child when an older woman in the community would make a coconut cake, and sell them. She never shared her recipe. I remember the icing being fluffy. I believe your recipe was how she made it. Thank you again. One day I will try it. Maybe at seventy.
As a kid my granny made all cakes from scratch too but I never liked coconut cake. My favorite was chocolate cake and her Christmas fruit cakes. Mmm mmm good.

My Mama made the best Coconut Cake from scratch here in Georgia you ever tasted! She used Birdseye Coconut soaked in creme of coconut ... She did it just like this! So moist and so good! My Daddy favorite cake in the world. He called them, Sawdust Cakes bc of the coconut. Lol. I miss my Daddy and Mama so much! I'll see them soon when the Lord Comes to carry me home, Amen. What keeps the cake from becoming soggy Ms. Tammy? With the coconut being so “soupy” as you put it, would it not cause the bottom of the cake, at least, to become soggy over time? I thought maybe the icing might be a barrier, but the bottoms of the cake layers are lying on top of the coconut layer. Thanks for any info! I can’t wait to try to make this cake and I just want to make sure I’m making it right. ☺️🩷🙌🏼

Every Christmas, my grandma would make chocolate pies and coconut pies, and that would be our desserts. So we have always made kept that tradition and her recipe of course. I had never had a coconut cake until I found the new Dolly Parton cake mixes and she has one for coconut cake. So I got that and made it for our family reunion this summer, and it was a hit! I started making sweet tea by the gallon about age 14 by myself. Sweet tea lasts about 2 days at my house. So I think 183 x44 years I think. I think I’ve made approximately 8052 gallons of sweet tea. I thought this was funny😂 How about you how many gallons have you made?❤ I enjoy all your videos.

I use the cake pan wraps. The cake layers are level, get done and remain light on the edges. I am lazy. I use the parchment liners.
