    So I am actually a professional chef, and I don’t have a big family to feed, it’s just me and my husband. However, he and I both grew up in low income families, and are familiar with budget/frugal cooking. I love this channel. No judgement for low income meals, really creative ways to feed a family without going to the store every day, or using “fancy” ingredients.

      Same, Culinary Arts and Sciences with a double major in Special Needs Dietary Requirements for my first degree, and I deeply appreciate the fact that she wholly respects people who can't necessarily afford to follow food trends. We were super poor when I was a kid as well. Nothing drives me crazier than people who gripe that she uses store brand, non-organic ingredients (seriously people, eat food that you can afford that is going to keep you going). Life is complicated enough, and poor shaming is complete BS.

      @@pansprayers I grew up super poor myself. We fortunately had our own farm so we grew our own fruits, veggies, meat, eggs and dairy. It pains me so much to see how critical people can get about using generics/store brands or non organic. It’s hard enough to make a paycheck stretch far enough to cover everything, especially when you carry student loan debt like so many of us do. I’m so glad to see people like you standing up and letting people know it’s ok to not eat organic and use fancy ingredients.
      One of my favorite foods of all time is pinto beans with a ham bone or hock, fried potatoes, collard greens and cornbread. Certainly not a fancy meal but it’s my favorite comfort food in the world. It’s something my granny would make for us weekly and something she used to eat as a child during the Depression. When I eat it the world becomes simple again for a moment, it brings a humbleness to me, that we haven’t seen hard times like my granny or worse my great granny did. Things might have been hard then but they were a lot more simple because ingredients were simple.

      Jen, since you have a kitchenaid, get the ice cream bowl attachment. I have it and use it to make sorbet, ice cream, and frozen margaritas!!!!

    Add some grated veg into the meatballs like carrots or zucchini, spreads further and add some extra nutritional value.

      I agree with above, You can have 50/50 of finely grated vegs and meat just maybe add one or two more eggs.

      I didn't know what freezer burnt actually was til a few years ago, that was just frozen when I was a kid lol

      I think freezer burnt is different than ice crystals. True freezer burn would not be edible as the chicken turns white and is very hard.

    Christine!! Could you please do a vid on what kind of foods freeze/store well for a long time?? I see you freeze naan and stuff, I didn’t even know that was possible.
    Idk I’m young and no one has ever taught me that stuff. I looked through your vids but didn’t see one that taught food storage. Just a thought!!

      For the time being, just know there's a lot of good info on that on the internet. You can freeze a lot of things well if you remove as much air as possible. Dairy can be frozen, but other than milk and shredded cheese, the other dairy products can only be used in cooking. Hope that helps a little ✌️

      Here's a great freezer tip video from Jordan Page. She has another one too. I've learned a lot in the last year about what I can freeze and what the best format is for frozen items. My favorite things to freeze, that I didn't know you could until recently are tofu (in the package), bags of coleslaw, bags of shredded cheese, refried beans, whole loaves of bread/bagels, chocolate.

      I know this is a old comment but I thought I'd add my 2 cents.
      Most things that are low fat will freeze well, bread, chicken, chopped up veggies.
      Fat freezes well to (cheese, icecream, fatty meats, butter etc) and will last longer than normal BUT fat going bad (rancid) is a oxidation process, not decay, so fat can be deepfrozen and still thaw out rancid and unedible.
      I try to rotate out fatty meats and dairy every 3-6 months, chicken around every 6 months (if it lasts that long...) and veggies/bread 6-12 months (might get a bit of freezer burn/dehydration after a while).
      Ready done meals I try to eat within 3-6 months.

    Great video! Just a tip when making meatballs, instead of breadcrumbs I toss in a box of stovetop stuffing mix and some water and it really stretches out the meat and makes for very moist meatballs!

      Cyndi Rothrock smart! I got now 7 month old twins so for me nothing has really changed. I’ve basically have been self quarantined since they were born. We’re Hispanic so for us it’s been beans at every meal. We’ve got a giant bag of dry pinto beans in the deep freezer.

      Cyndi Rothrock formula fed. We’re prepared on that front- thank God. I didn’t even have to buy diapers or wipes because my family set me up at my baby shower so well that I’m covered for months.

    If you have a middle eastern store near you, or a grocery with a larger ethnic section, they sell bricks of “baking dates”, which is the dates already processed into a paste! Sooo easy!!

    When I make meatballs I use a cookie scoop. I don't roll them so they have a flat bottom. I cook several batches and freeze them.

    So you inspired me to use my freezer burnt country ribs I’ve had in the deep freezer. I couldn’t bring my self to toss them out but was nervous to use it. Omg they made the best dinner tonight! Various seasoning, and some diet Dr Pepper. Cooked all day since right now we are all working at home...thankfully...anyway then hot oven for 15 min with bbq. My family loved them! Thank you for helping us stretch what we have in these difficult times!

    Hey Christine. Meatballs are always best when simmered in sauce, Make a tomato sauce from scratch and add meatballs to it until they are firm and cooked. Remove and you can eat them immediately (like meatball meal number 2) or you can save them for later, just store with a bit of extra sauce for the subs.

    I know you’ll never see this because this is a 3 yr old video but i just had to comment!! Huckleberries grew Wild up and down the old country dirt road I lived on as a kid. We could hardly wait for them to get ripe so we could sit on the side of the road and eat them, dirt and all!!! You brought back some sweet memories!! We always went to Texas to visit my Mama’s sisters on summer vacation and we took my aunt a freezer carton full of sweet huckleberries!!! She loved them!!!!❤❤❤. By the way….I live in VA…so they grew here too. I never see them now😢

    I mix cooked lentils in with meatloaf and meatballs. The flavor and texture works really well. And it makes them much more affordable

    If you use unsliced rolls for the meatball, you can make a pocket out of the side and pull out the middle. You can put the sauce, smaller meatballs add saute veggies and cheese to make it stretch. Freeze the leftover meatballs for another week.

    I like making meatloaf and meatballs when I do I use as much shredded veg as meat it bulks it out and I’ve used couscous too. Loved this video. Stay safe and god bless xx

    Love your meal prep vids! I'm convinced your family all has accelerated metabolisms because you eat spicy stuff on the regular. Just read an article yesterday that said if you eat aprx 1/2 tsp of cayenne/red pepper flakes/etc. it increases metabolism by 25% for 4+ hrs. ;)

    I have the ice cream attachment for my kitchen aid mixer. It has the same bowl that is frozen. The ice cream is delicious!

    If you're making meatballs or meatloaf stretch it. Put more breadcrumbs and oatmeal, ground flax seed, grate some carrots onions, zucchini ect. or tear up some spinach or kale and definitely add eggs (and ketchup if meatloaf). Hide everything in there 😂. Same idea behind taco meat. For every pound of meat in goes a can of beans and a handful of oatmeal. My family had no Idea what I feed them lol. This week I will be hiding cabbage in potato soup 🤷‍♀️.

      We also hate quinoa so anytime I boil chicken I immediately use the stock to make quinoa and freeze it. I use it to stretch chop meat recipes and black bean burgers.

    for making round meatballs I use my hands which I moist with some cold water. After some rolling, I moist the hands again. If I have a lot of time, I'll preboil the meatballs in boiling water until they float (roll them and directly put them in the pot with boiling water) and then either fry in a frying pan or if I'm making a lot finish them in the oven. To make the meat go around for more meatballs, I'd let some breadcrumbs soak in some milk and mix that with the minced meat, egg and seasonings.

    I make turkey meatballs, and my 1.25 inch cookie scoop makes the right size ball with less hand contact per meatball. Even when I make them "messy" with that scoop, meaning no tucking in of the edges, just scrape against the side of the bowl....they come out great!!!! The smaller size is easier to freeze, easier to plop in a mini crock with spaghetti sauce to heat up in 2 hours!

    Definitely huckleberries in Wyoming, too. After climbing the Grand the first fresh food I'd had in 2 days was a handful of huckleberries along the trail on the hike out. ❤❤

    Took out a largish pork loin chop and pkg of frozen shrimp from the freezer. Cut chop into cubes and put in food processor. Add soy sauce, white pepper, sugar, sesame oil, salt, cornstarch and egg. Transfer to bowl add minced carrot, minced bamboo shoots, and diced shrimp. Voila! Pot stickers, or won ton, or just drop small spoonfuls into hot soup. Yum for freezer clean outs.

    pat your meatball mixture into a sheet pan with edges tall enough to hold any grease. slice into squares and bake. you will have meat cubes but anyone complaining has to make the next day's meal. that really cuts down on complaints around here. you want the most efficient way to do something, look around for the laziest person. I'll be there doing it the easy way.

    I recently made meatballs with pasta sauce added into the mixture, definitely adds some good moisture. I also seared them and then added the pasta sauce in the same pan to finish cooking the meatballs. Seriously changed my mind about meatballs!

    Your videos are my favorite to watch while I get dinner ready. Tonight is beef vegetable stew FROM MY FREEZER (I put mine in the crock pot fully frozen on warm this morning and just let it roll) and I made homemade rolls to go with it. LOVE, PEACE, AND CHICKEN GREASE!

    When scooping meatballs scoop all portions first then roll/shape them. Packing the scoop with meat and leveling it off on the edge of the bowl gives the meatball shape and you do not need to shape them. Hope this helps.

    I’ve made these date balls and they’re amazing! I didn’t have coconut oil so used some of the water I had left from needing to soften my dates. I also didn’t coat them in chocolate but they tasted amazing! Love them as a power snack

    To make meat go further in meatballs you need to add oats or cracker crumbs, onions, possibly other veggies cropped finely to bulk it out. When I make meatballs I use 2lbs of meat and it makes a 9x13 pan of good sized meatballs. I go for about golf ball size!

    You could do this as burgers. Italian sausage patties, sauce and mozzarella on burger bun. Could even just use beef or turkey burger patties.

    For meatballs use a small ice cream scoop, one side is flat but it makes it easy to bake and gives a flat side for easy sandwich stacking.

    My advice for the meatball making process....i use a cookie scoop. After mixing the meat i scoop the meatballs onto a cutting board and not worry about forming them. After i scoop all the meat mix to get the portions right i use a small bowl with water, dip fingers in the water and shape the meatballs. I find it keeps it efficient because it can feel tedious! A good time when u make them to do a double batch if you can! Love your channel and appreciate all the wonderful content!

    Awesome ideas! Thanks. About the meatballs....I stretch mine out by putting shredded carrots or zucchini in along with dry oatmeal or bread crumbs....you get way more meatballs and the shredded veggies (and I add an egg) keep the meatballs moist.

    Meatball making tip : put the meat inside a small cup/glass and just shake it covering with your hand. If it is stiking to the glass add a little bit of flour before introducing the meat. :)

    Ok so I know I’m late to the show but I use, for the meatballs, a small scoop, flatten the bottom by filling the scoop completely and scraping the excess on the bowl rim, then bake. I hate rolling and have no technique either!!

    Meatball subs made on garlic bread rolls will change your world. If you don't want the garlic butter you can lightly spray olive oil and rub a garlic clove over it.

    Have you ever roasted the veggies in the airfryer put them in a bowl coat them in the sauce and back in the airfryer for another minute or 2 its amazing.

    Loved all the recipe ideas! Also you can wet your hands to keep meatballs from sticking to your hands. I just keep a little bowl of water when I'm rolling them.

    Great video! I make the homemade meatball subs too! I bake my meatballs( used to fry them when I was younger) to get them done! Then I add them into my spaghetti sauce along with sliced up bell peppers and onions and simmer that all together! Add that on a hoagie or sub bun and top with mozzarella cheese! ( or whatever your cheese preference is),and pop in the oven on broil to melt the cheese! Delicious and my kids always loved it!

    I find meatballs and meatloaf to be an expensive meal too. To make them cheaper, I mix in lentils and grated/finely chopped veggies in with the meat.

    You can bulk up your meatballs with stovetop dressing and finely diced veggies same with meatloaf

    I use a cookie scoop to make my meatballs uniform. I also double my meatloaf. So 1 meatloaf and lots of meatballs so one meal can be used later.
