Not sarcasm. My goal when I cook pork is an internal temp of around 145F. Call it medium to medium-well.
The old "Cook pork until it is well done." leads to something akin to pork flavored shoe leather. The old reason for cooking pork well done was to kill any trichinosis parasites. That is not a problem with modern commercial pork, and besides, the little critters die at around 137F.

I was recently in New Orleans and made some herbed mozzarella stuffed pork chops for my best friend and her housemates and they were a little surprised when I served them just above 146F but ultimately told me that they were one of the best things they had ever eaten.
I went on to tell them why it's not nearly such a big deal to have pork cooked to lower levels of "doneness" so long as you source your meats from good places.
Btw, I watch literally every one of your videos, I've learned a ton and I really appreciate the humor you bring to your instruction. Your channel is one I recommend to a LOT of people who want to learn how to cook.

I'm Mongolian, and I'm pretty sure Mongolians rarely eat pork chops, if ever. But I've always liked how other countries made up new menus and called it Mongolian..you know makes us sound more glamorous, in contrast to the simple things we actually eat everyday.
The same thing can usually be applied to Italy/“”Italian” foods, if you ask for spaghetti and meatballs in Italy they will instantly know you are a tourist lol.

One of the best if not the best foodwishes recipe, if your chops are dry you fucked up and I suggest starting over.
If your chops are dry, you cooked them too long.
Chef gave a shout out to Napa Valley! I used to work in Yountville, and I lived in Napa, in 70's. Now I could not even afford to eat in this restaurant he named. Back in the day, all wine tasting was FREE, as much as you wanted, all day, at places like Christian Brothers and Beringer Brothers wineries. Needless to say, that's where I first gained an "appreciation" for fine wines!! :D LOL This looks good too!! Who knew Mongolians ate pork chops; I thought they just ate yaks!!! LOL.

John...Love the vids ...but this dish ...this particular dish ...wow.... really special! Used 2 inch chops rather than the 3 inchers you were firing up and as hard as I tried could not locate turmeric in my spice cabinet Can't be sure if that had an adverse effect but everything was fantastic anyway. That vinegar mustard sauce was fantastic and the unexpected supporting sauce award winner.. The marinade, besides adding great flavor to the chops did an excellent imitation of a brine. The finished product was moist and tender. This one moved right up to "go to for guests" dish ...Thanks ! and keep the vids coming!

Pork is my fav meat. I was already a fan. Then you added ginger (my favourite spice) - I just about cried. THEN you blew my mind and added sesame oil and soya sauce. THIS IS MY TYPE OF FOOD...
This recipe is SO good, highly recommend. This and also his Apple cider glazed pork chops are fantastic. Great meals if you're looking to impress someone. Super tasty and a little different.

Looks good. Anything glazed and grilled is great. Garlic, ginger, and soy is a good start to any sauce or marinade (i love Mongolian beef). The extra mustard sauce is intriguing- i would never think of that, especially the use of the egg. I get lots of new and good ideas from these videos. Thumbs up on indirect cooking- works well for many things

Hilarious and awesome take on one of my all-time favorite meals! The first time I went to Napa a friend told me I had to eat the pork chop at Mustards. I was expecting some advice about getting reservations at the French Laundry or something more exotic. But a pork chop?! at a place called Mustards?! Long story short it was the best decision of the trip and totally changed my attitude regarding pork chops. Beautiful
Hi there man, I don't eat pork myself, (just personal preference), but I tried this with chicken strips, fried them and served with noodles and it was amazing! The marinade is perfect after 3 hours in the fridge. The chicken absorbs all the flavour perfectly :)

Yeah, you are absolutely right. My grandma said back then when she lived in Xinjiang, China, people always eat simple stuff like pilaf or naan bread with simple soup or a grill chicken with very few ingredient. She said people eat to get energy to work.

Chef John you are the Don of good recipes... but raw turmeric in a sauce sounds a little weird, I may be wrong though. In Indian food we always cook the turmeric out by adding directly to the hot oil at the beginning or at the initial stages of the sauce preparation, otherwise you can feel the raw powdery turmeric taste on your palette.
Hey btw... turmeric root made into a paste with a mortar and grinder, has a very different and much stronger taste than the dried powder. Give it a try if you feel like sometime.
