    Love pork chops,buy often.like pan fryer/w garlic salt .never knew about baking soda,never pounded them -- so always had tough pork chops-- still love pork. Thank you for sharing your wisdom

    Truthfully i never use baking soda on foods. I just tried this on steaks. WOW it was the best steak ever! I never beat my meat

    1. Flatten meat with mallet for a couple of minutes.
    2. Bowl of water with 1/2 tbs baking soda mixed well. Soak meat for 15-20 min. Wash meat under running water.
    3. Prepare sauce for marination

      There many ways. I didn't beat my meat. I just put it on heavy let it set 5 hour in the frig. and risen it off good. Pat Dry, Then butter it, then season the steak It was Excellent melt in your mouth FLAVOR WAS AWESOME

      First time I went to Singapore I thought the guy had a speech impediment when he said “tree” for “three”. I subsequently found out the locals all talk like that. Singlish is really hard on the ears. This guy is ok with his accent but Singlish is nasty. wah Lao!

    Hi there, I tried the baking soda trick once but it gave a horrible taste to the meat. Perhaps I used too much of it, and it was not on water... do you have a similar experience ?

      I.dont use baking soda, it does gv weird taste. I pay higher price for better pork chop

      When using baking soda, make sure to rinse it well before marinating otherwise you will get that metallic after taste in your meat.

    Thank you, Ah Pa, for the tenderizing tip of using baking soda for pork chops! I have NEVER been able to get my pork chops truly tender. I do have a question, though? Is that "Light Soya Sauce" you are using in the marinade, right after the black pepper? Thank you. :)

    You could make the marinade in the same bowl before adding chops and not have excess dishes to wash. Where the chops came from on the pig would help indicate the amount of tenderizing, no? Covering pork is braising them which tenderizes in itself.

    Love ur videos recipes , for this tenderizing method , cn i know the ratio of water to baking soda measurement , how much ml water ?

      There is a recommended ratio of 1 teaspoon for every 1/2 cup of water. But Ah Pa didn’t follow this, i only agak one bowl of water with about 1 tablespoon of baking soda.

    Don't buy chops! Buy shoulder butt steaks instead, twice as big, less expensive, usually some marbling, cut out/off the fat, and no need to tenderize!!! Cook the same, add sauces as desired, and yummy. I've not bought chops for decades because butts just that good.

    Papain powder from papaya or bromelain from pineapple will help to break down the tough fibres in meat.

    I threw away a jar of fermented tofu after using a few pieces because I didn't know recipes to use them for. Now I regret doing that after I've seen this video. I was told that it doesn't spoil if kept in the ref. Thanks for this recipe .

      I e done the exact some thing. Only use it for chicken wings and didn’t know how to use the remaining. Sit it the fridge too long thinking it’s spoiled so I threw it away. Only use 4 cubes for chicken wings haha

    My Grandma is a chef.. Every time she Fry pork chop, she always marinate and soak it in kiwi fruit. For a few minutes, till tender. Wash and fry.

    I brown in butter, brown, then braise. Cover with water and simmer, covered, for an hour to hour and a half depending on thickness. Add water as needed. Uncover the last 10 minutes. Pour juice over chops. Chops can be cut with a fork and will melt in your mouth. Easy.

    I just found your channel my friend. I have a question I hope you can help me. I have a cheap cut of beef very tough. An I do the same with the baking soda too? If we use the baking soda in moderation do we still need to rince the meat? Instead of adding the baking soda to the water could I just add the baking soda directly to the meat instead of wasting the water?

      Do not apply baking soda directly to the meat, try dilute it in water then soak the beef awhile and rinse

I suppose it would also act as a rinse to prevent baking soda directly on meat... does this mean even if your place baking soda directly on meat and then rince very well later on, it will still not be good? Have you tried this? I don't want to waste food so I will learn from you. Food is so expensive.

    Instead of using rice wine you can use teelseed oil to dissolve bean curd learnt from Hong Kong cook. Better result.
