    Cowboy Kent, I used to love sharing your recipe videos with my father. He was a proud Oklahoman and loved the outdoors and cooking. He passed away this weekend completely unexpectedly. Naturally it's hard, but while I go through the process with my sister of getting things in order, watching your video has helped me to think of the good times, barbecuing, helping out in the backyard, camping trips and more. Thank you for what you do, creating wonderful content for our family and sharing these great videos. Im sure you know this but to many people it means so much more than just a delicious meal

    Kent I’ve been watching you for 4 plus years and I enjoy each and every video you and Shan have been gracious enough to put out. I just want to tell you that I eat my pork chops at no higher than 145 F . That’s the new recommendation. Haven’t had any problems.

      if he took them out just prior to 145 would of been perfect but you can see it was overcooked at least for me

      The Danger Zone for meat is 40 degrees to 140 degrees. Cook any meat up until it hits 140 for 10 minutes and you're good to go. Goes for beef, pork, chicken, turkey, duck, goose, etc.

    I am so happy to have found this channel last night ! I showed a couple of these to my 89 year old Dad . . . Yewwweeee! He was laughin and smiling !     Hey Kent, I just picked up a couple of those fat chops last week. They're called Husker Chops in my neck of the woods. I was gonna stuff em and do em on the grill but now I think I'll do a combination dry brine and stuffed. Not too many grilling days left this year, winter is on the way.       Agreed. I probably grill 300 days out of the year. Sometimes I'm standing inside watching the grill while it's snowing. It can be done!

      Down South where I am you can grill all year since we never have snow. Most we get is freezing rain, and I suppose you can still grill in that if you have a raincoat handy and maybe some shelter for the grill. Its dedication if you grill in snow, so kudos to y'all who do that. 👌😁

    Dry brineing seems to be the holy grail of cooking. Alton Brown explained it very well, the salt brings the water and tasty proteins to the surface of the meat, and then the meat pulls the salt back in, seasoning the meat from the inside.

      It is a little expensive but I bought a bottle from him this weekend in Tulsa. It is the best barbecue sauce I’ve ever had! I’ll probably still use Head Country for when I make a lot of food, but I definitely want to keep this on hand for special occasions.

    I made the mistake of watching this on an empty stomach.

    I made the other pork chops following your video cooking them in the skillet and using lime juice and bar none those were some of the next I've ever had. So now I'm really looking forward to making these bad boys

    I’m a big pork chop fan! That said, I can never understand why everyone goes toward the center cut chops. Who doesn’t prefer a ribeye over a strip. Bone in rib end chop is where it’s at!

      My sister tried to tell me at our last family barbeque that filet mignon is better and has more flavor than a ribeye. That was in June and I haven't spoken to her since.
