    Traditional Armenian Gata Recipe

    Ingredients:
    For the dough:
    • 3 cups all-purpose flour
    • 1 cup unsalted butter (softened)
    • 1 cup yogurt
    • 1 egg
    • 1 tablespoon sugar
    • 1 teaspoon baking powder
    • A pinch of salt
    For the filling (Khoriz):
    • 1 1/2 cups all-purpose flour
    • 1 cup unsalted butter (softened)
    • 1 cup sugar
    • 1 teaspoon vanilla extract
    For brushing:
    • 1 egg (beaten)

    Instructions:
    1. Prepare the dough:
    In a large bowl, combine flour, sugar, baking powder, and a pinch of salt. Add the softened butter and mix until it resembles coarse crumbs. In a separate bowl, whisk together the egg, milk, and yogurt. Gradually mix the wet ingredients into the flour mixture until a soft dough forms. Cover the dough and let it rest in the fridge for 30 minutes.
    2. Prepare the filling (Khoriz):
    In a separate bowl, combine flour and sugar. Add softened butter and vanilla extract. Mix until you get a crumbly, grainy mixture.
    3. Assemble the Gata:
    Preheat your oven to 350°F (175°C). Divide the dough into two parts. Roll out one portion into a thin rectangle on a floured surface. Spread half of the filling evenly over the dough. Roll the dough tightly like a jelly roll, starting from one end. Repeat with the second portion.
    4. Cut and bake:
    Slice the rolled dough into pieces about 1.5 inches thick and place them on a lined baking sheet. Brush the tops with beaten egg for a golden finish.
    5. Bake:
    Bake in the preheated oven for 25-30 minutes, or until the Gata turns golden brown.
    6. Cool and serve:
    Let the Gata cool slightly before serving. Enjoy with a cup of tea or coffee!
