    You’re making my vegan life much more satisfying, dear Gretchen. Before veganism and changing profession, I worked as a cake decorator, so I have a special relationship with desserts and I am immensely thankful for the ability to continue with my hobby even on vegan diet, with your recipes 🌹

    Hey Gretchen, I heard how one can melt sugar, in the oven so that it's one large piece, like in a cake pan, and then one can break it into large chunks, for decoration. Not like glass or rock candy, just plain sugar. Of coarse, one could color it but I'm looking to make large crystals or grains of sugar, as the decorator sugar one buys is too expensive. Do you know how to do that? If so, can you do a video for us?

    Gretchen, this question is totally unrelated to this video, but you want requests on Foods to veganize, so here is one....my all time favorite sweet is cream horns, or French horns......puff pastry rolled into a funnel shape with delicious cream inside, and coarse sugar or powdered sugar over the outside. The cream was as smooth as whipped cream. Can you veganize the cream?

    Ok, I was set on making a chocolate cheesecake next weekend, but after seeing this recipe............ Gretchen, a question off subject......the canisters at the beginning of the video. Are they glass or plastic? And, it looks like a small measuring spoon on each one. Or, is that just the handle of the canister? And, whatever the mat was toward the end of the video that you put I think the baked cheesecake on. Have you thought about selling those, or other items, or even coming out with your line of utensils you use in your kitchen? And, I saw you in the tofu group I’m in on Facebook. There are excellent recipes in that group, and good advice, too. I think you will enjoy being in the group. And, finally, you sound so chipper in the videos you have made this year. So glad to hear the lilt in your voice, and you seem happy.

      Thank you!! yes I am feeling great! The canisters are plastic and the "spoons" are not really spoons that are functional, they are decorative to just look like spoons, they are the clasps to clamp down the lids (got them at Bed & Bath)
      The mat was not actually a mat, it was a cutting board that one of my awesome friends/followers from this UA-cam channel got for me for Christmas 2 years ago! It's it awesome!? It's a glass cutting board.
      And yes, I just joined the Tofu group on facebook LOL.. I sure loves me sum TOFU! See you there!! :)

    Hiya Gretchen. It looks like you only use a springform pan for the Baklava part of the recipe. if you dont use a springform pan for the cheesecake, can you tell me how to remove the cheesecake from the pan please?

    Looks delicious!! How long can Phllyo dough stay in the refrigerator if unopened? I took mine out of the freezer last week and have yet to make anything with it. Should I toss it or use it still to make your yummy Vegan Maple Walnut Baklava Cheesecake!! Thank you for sharing

      Trina Flynn funny you should ask 😀 I had mine in the freezer, then the freezer broke so I put it in the fridge. Then the entire fridge/freezer broke and I put it in a cooler. Then got a new fridge and it sat in there for almost 3more weeks! Still good as new!! Lol so yeah... don’t you worry!! 🤣👍🏻💪🏼🌱

      Gretchen, I had to do this a few years back when my freezer broke it was not fun but I managed with lots of ice... lol I'm so glad to know the Phllyo dough will be ok to make your recipe. The sound of the maple syrup pouring over the crunchy phyllo topped it off so yummy! I love your recipes
