Potato starch makes the texture softer or fluffier versus wheat/corn. Also it has more neutral flavor. But you know what, if you're adventurous, you can go ahead and try wheat or corn! We followed the instructions explicitly and the cake did not turn out as we expected. So sad! My granddaughter felt as if she was taking taking shots at a frat party, it was so strong…bitter and we purchased the best Lemon Cello available…again, so sad as I waited for her to visit to try this project…so disappointed.
