Historically in my family the dressing contains any chicken that was used to create the bone broth. I can remember having the job of taking meat off the necks 😢😂. I make the same family recipe (much like yours), although we tear/break cornbread. I use Johnsonville Italian sausage squeezed from the casings. I still make a bone broth, but I use the instant pot vs hours on the stove.
I save all my chicken bones from all my chicken meals and I keep them in a big freezer bag in the freezer and when the freezer bag gets full I take them and stick them in a giant pot. Fill up the water, throw in some carrots, onions, celery and let it cook for 8 hours

Lord, that looks delicious! For 30 years, I made everything BUT the Mac n cheese which is my mom’s specialty. I made sausage dressing plenty of times, but my family’s favorite is my duck dressing…..a whole duck is cooked deboned and added to my dressing.

a few differnces. i always use homemade cornbread with this one. it actually makes a differnce in my other recipe kinda doesnt. i use sausage and only 1 soup, onions, and peppers and creole seasoning. they dont taste the same, but both are great! the one have a focused chicken flavor, this one does not. you can make this one faster as you dont have to boil chicken
I’ve been making dressing since I was about 25, and I’m now 81. A couple of years ago, my daughter took over. Both of us do our best to copy my mother’s “recipe,” but we found that was impossible. Mother’s cooking didn’t have written instructions. My friend Erie-a home ec teacher-told me (after my mother passed) how to develop a measured version of such cooking. So simple, but I really can often be a dunce! Any way, the grandkids and great-grandkids won’t eat anyone else’s dressing, so it must be okay.
Butterball sells refrigerated turkey breakfast sausage patties, if you don't want to eat pork sausage. They're fully cooked but taste much better when browned.
I have used sage sausage, turkey and fresh oysters.....amazing. Of course if you use all three....cut back on the amount of meat but I like to rotate the meat to give it a change up
I first made sage sausage dressing some years ago and a friend told me about rice dressing. You make it exactly like cornbread dressing but use cooked rice instead of cornbread. I added that sage sausage to it and it was fire…sort of tasted like a cross between dressing and dirty rice. Now that I know about basmati and jasmine rice I’ll try that. Your dressing looks like it takes good; I need more butter though.
I agree, too much meat in the dressing ruins it. I keep any leftover cornbread pieces in the freezer. Then I make a very savory one. Oh, definitely gonna add that cream. Thanks! 💙

you can construct it early, place it in the pan and stick in the fridge and bake the next day. cover it tightly with foil so it doesnt lose moisture. i think you will have to bake it longer since its being baked from cold. you can also fully cook the day before. i reheat leftovers all the time and they taste bomb!
I wouldn't. The best part is putting the liquid in and watching the bread "bloom". If you refrigerate it wouldn't do that. You could prepare everything and assemble the next day.@@CamirrasKitchen

people always want my chili! it's the best chili. the recipe has like... 40+ spices in it I kind of go overboard. It also uses bison meat! It's real good. My grandma used to make chili but I made it one year and now I'm in charge of chili :)
cream of celery will enhance the celery taste, which does match dressing if you like that flavor to stand out. I used Chef purdommes poultry magic for chicken seasoning

No, the simpler the better. My mother would never put Creole seasoning, chicken seasoning, thyme, rosemary, cream of chicken soup, or some of the other add-ins you listed.
