Yes it should work and yes it just needs a little practice and then you will be well on your way making egg rolls with these …if you look through my channel I have the recipe for making egg rolls with chickpea flour too x
If you are keto /Low carb then none of the other flours like almond flour etc will work coz lupin flour works like a bean flour …of course you could use chickpea flour if you are not stuck on pure keto ingredients x

I was try bamboo fibers it came good but not Crunchy like phyllo. It was more like crepes.
I will by lupin flour because I lone spanakopita and cheese pie.

It was thin but after bake in oven for 15 minutes the color was good the texture was still soft
