My sister's and I sat under my mother's instructions when we were young helping making jelly, jams, preserves and Apple butter. Them were the Good Old Days! Good morning Chef Jeffrey thank you for one of my favorite recipes that peach preserves. I truly love ❤️ it. Wish I was there to get some preserves and hot biscuits. Love you for bringing all the blessed and wonderful memories. I can recall back about 60 years when I use to do all this.
My mom was from Statesboro Georgia I watched her cook so many homemade foods. My my canned the time she made peach strawberry raspberry orange preserves and jellies, she also made homemade applesauce. I never ate fruits or vegetables out of a can heck I never ate a boxed cake . Some kind of way she made watermelon rid preserves. When I tell you it was delicious. Everything she cooked was homemade I never seen her make any preserves with other juice. My mom was the best I enjoyed helping and peeling and stirring the jelly and preserves in a big giant pot. She even made the apple turnovers. I really enjoyed watching your video Sir. This brought back great memories from my childhood.My daughter always says, "Mom you grew up in the best times, your mom cooked and baked everything homemade." Chef, we had 2 pear trees and I picked a whole lot of pears. I have great memories of my mom & dad's pear preserves on hot buttery biscuits in the fall and winter. Also beautiful golden fig preserves they canned.

_Extremely interesting process. As a kid, my Mom’s Summers were also spent “canning” Peaches as well 🍑 and I believe, Plums. As far as Vegetables, all we knew was fresh, but I don’t remember her canning veggies. One of my favorite kitchen chores was snapping and cleaning green beans for Sunday’s Dinner - good times_

Needless to say this my guy( our guy fam) excellent video , the color is beautiful and they look so fresh and to think these were the ones he took us with him to pick up and was laid out on the table. My momma always used the peeling to make jelly. I used a galvanized dish pan to can in. I’d cut my peaches or apples up, pour my 8 cups of sugar over them and let them set covered overnight. Then I cooked them down the next day. This is a nice new way to try. I do measure everything and so far I’ve only had to use the amount the ball canning recipe calls for. I’m a stickler for measuring because I want my food to always taste the same. My oldest son is the worst for not measuring, then fusses because his stuff doesn’t taste the same way twice.
Good morning chef Jeffrey. Your peach preserves and jelly is the real deal. I’ve never seen anything in the market that look so beautiful . I’m going to make this as soon as I find that strainer that you used. What is the name of that device. I’ll be going to the farmers market to pick up a few pounds. I know your heart is heavy right now. I remember when I lost my mother. I felt empty. But with time I felt better, especially when I was cooking in the kitchen and remembering all the dishes that she taught me a year before she died. That year was the most special for me, all of our good conversations ,experiences and life’s lesson were talked about in the kitchen. So now the kitchen is my favorite spot.
You're absolutely right about learning this old school skill. I sure wish I would've asked my grandparents more questions about this kind of thing. I soaked up what I could and I remember alot but the rest I'm learning on my own and by watching people like you! Thanks for sharing 👍🏽😊

My momma always used the peeling to make jelly. I used a galvanized dish pan to can in. I’d cut my peaches or apples up, pour my 8 cups of sugar over them and let them set covered overnight. Then I cooked them down the next day. This is a nice new way to try. I do measure everything and so far I’ve only had to use the amount the ball canning recipe calls for. I’m a stickler for measuring because I want my food to always taste the same. My oldest son is the worst for not measuring, then fusses because his stuff doesn’t taste the same way twice.

I’m going to make this as soon as I find that strainer that you used. What is the name of that device. I’ll be going to the farmers market to pick up a few pounds. I know your heart is heavy right now. I remember when I lost my mother. I felt empty. But with time I felt better, especially when I was cooking in the kitchen and remembering all the dishes that she taught me a year before she died. That year was the most special for me, all of our good conversations ,experiences and life’s lesson were talked about in the kitchen. So now the kitchen is my favorite spot.
