    Bergamot is from the bergamot orange. It is the main flavor note in Earl Grey tea.

      This is correct. It's primarily a mediterranean farmed fruit.

      it's not temperature stable enough, and loses the benefit of pressurization

      Yes, or 91. But we tend to use 96 more often.

    I am not an expert by any means , but doesnt the paper absorb some of the oils of this great coffee that would change flavor and mouthfeel?

      on the contrary, this coffee is better with clarity, and oils can clog up your ability to taste its more nuanced characteristics

      That's likely. The roaster actually informed us after this video that they tweaked and optimized their roast profile after this was published.
