My grandmother, a top-notch southern cook, always said soaking chicken in an egg (or milk) mixture, causes it to brown prematurely. I've tried it, and she's right. By the time it ends up being DONE, the chicken is so dark ... borderline black-looking.

I've never heard of soaking chicken in eggs before cooking. I have heard of soaking in salted water, or buttermilk, or regular milk with seasoning, but this is a first. I am definitely going to try this!! My mouth is still watering!

This is exactly how my grandmother cut up her chicken. The last 20 years of her life she complained every time that all the chickens at the store were “too dad blamed big.” She wanted a “young fryer.” Win Dixie used to get them once a year and she’d buy 10 3lb chickens 😂
Hi Paula! What also would go good with your fried chicken would be potatoe salad 🥗 and coleslaw and homemade biscuits! Buttermilk makes a good marinade for fried chicken
We drove 12 hours to Savannah & tried to get into your restaurant. The line was 250+ people. We could not wait hours to eat. Maybe next time we head South, we will try again. Fried Chicken looks Amazing!!!

I put the flour and seasoning in a brown paper bag and put a few pieces of chicken in the bag. Then shake the pieces until coated. After Crisco has heated to a med. temp. put the dark pieces in first but do not overlap in the pan. cook until done. ENJOY

Oh Mercy Me, i never could cook chicken, almost burned house down in my 20's, no more chicken for me, lol. My Sister passed away a little over a year ago and i miss her fried chicken. Think ill try again since im over 60!! Keep it up Lady!!
Just keep the heat low. That's the main issue with most people. They have the heat turned up way too high and the chicken ends up burning and smoking up the house as soon as they drop it in the skillet.
Paula the grandmothers were right!!! I always season my chicken the night before and leave it in the fridge over night. And tho my grandmother was a true southern cook the one thing the electric skillet came out for was to fry chicken. She said the temperature stayed more even and I follow the same pattern as she did. I have no idea WHY people soak chicken in buttermilk, that should be against the law! LOL God bless and best wishes always

Not going to lie, I've started putting hot sauce in my pre-flour chicken wash since I leaned it from Paula. Nowhere near as much as Paula uses though, gosh that's a lotta hot sauce. I don't mind some spicy kick, but I'm not sure I can afford a bottle of hot sauce for every batch of fried chicken.

MMMM, I love fried chicken. I used to buy boneless all the time, but now I buy 2 chicken breasts with the bone. I do not know why but I think meat tastes better with a bone in it. I go to alot of trouble when I cook chicken. To cook on Sunday, I start on Friday, I make a salt water brine and let it soak overnight. Saturday morning, I drain the salt water off. I put really good thick buttermilk, let it stay in the buttermilk till Sunday morning. I use self rising flour, and fry it in deep fat. It has the best crust. I put it in the oven for about an hour to make sure it is done. LOL, I could go and buy an entire fried chicken for 5.99 when it is on sale at Harris Teeter, they have really good chicken. I use organic chicken breasts, they taste better to me. There is nothing better than fried chicken, potato salad, and green beans, that is my favorite Sunday meal. I always cook Sunday lunch just like my mother did. LOL I am going to have to try your recipe, Paula. Love you, Paula My mother LOVED the backs too. September 15 is the anniversary of her death, she passed away on her birthday. I used to think that was terrible to pass away on your birthday, but someone told me, think about this, she is in heaven with her family celebrating her birthday. That makes me feel a little better. She loved watching you every Saturday morning when you were on the FN. We would see you make an anazing dessert, and she would say, I got to make that, so she would make it the next weekend. She would always have an amazing dessert every weekend or sometimes a pie during the week.
