豬肉底部不用切開的(好多人會這樣), 這樣醃會比較咸及乾, 五香粉同胡椒粉太多了, 燒肉切開見到好多黑色部份。其實放一晚吹乾就可以了, 放雪櫃2晚太廢事。
按你的做法完全成功。多谢。我是用烤箱200度grill, 烤一小时或以上至完全爆皮。为了解决生猪皮难扎针,我把猪肉放在锅内加水刚没过猪皮,烧开水十分钟,猪皮变软拿出扎针,十分容易扎出密针孔。

我今次切底失敗了,不知在那兒出錯. 我照足妳的方法來處理五花腩,放在雪櫃內風乾兩日後然後用光波爐來焗,一少時後豬皮除了在中間有一塊凸起之外,其他地方沒有起泡泡,我最後唯有將整塊五花腩放在焗爐內用上層來補救一下,除了看相不隹外,味道還不錯。
光波和烤箱是不一樣的哦~

我试过用光波炉,可以给你一点参考。光波炉烤的时间大概35-45分钟,全程230-250'度。腌制跟这方法一样,皮爆的很美。 光波炉有热风吹下,250度很快就会爆皮,要全程盯着免得烤得太 焦。 如热度没有达 230-250度,爆皮不会出现的。 跟据我的光波炉做是这样的,你的光波炉我就不懂了,只共参考。 谢谢。
