As someone who’s recently become a sole trader baker (I had my first farmer’s market last week), I want to learn to develop my own recipes to stand out in the market a but more. I have done my own spin on certain recipes before, but I’m ready to take the next step as an artisan baker.

This was a great video! With cooking, like pasta or pizza...I can just throw in whatever...but with baking I’m like what the heck how can I be precise?

You worked at The Dutch??? I freaking LOVE that restaurant!! My husband and I took my parents last year and I had their fried chicken. Holy crap! So good! My problem is: how do I measure EVERYTHING? It's insanely frustrating to have to measure everything! Especially my cooking is mostly not about baking but home cooking. For example when I make a dough I see with my eyes how much to add liquid. What's the easiest way to translate that into measurement??
Is there any other books that really helped you with your journey of being a professional in pastries? I love your work and i would love to create amazing vegan recipes that i'll know they work because of their chemical reactions so i need to do a lot of research, thanks
