Loved this!! I've really been wanting to try my hands at making mochi/ boba, but want to make it interesting and delicious for myself and friends! Super helpful advice and I'm so excited to find my dream home so that I can start off developing recipes and trying new ones :)
There is one thing I would like to know, and that is do bakers actually make a full batch for each iteration? Ingredients are SO pricey these days. If you scale down - how far down? Like, do you make 2 cookies or half a batch?
Hiya! Baker here, we try to do just 1 cookie! You add very small ingredients to make this 1 cookie and if it tastes really good, you triple or quadruple it!
Personally that's not how I go about it. Scaling up or down recipes involves a whole other set of issues and adjustments so if I'm testing something out I do either a whole batch or half batch and take copious notes to minimize the amount of disasters!
