All that I Doo remember is that I used 4 small can's of Coleman's mustard powder,1can of cold beer, honey ( I forgot how much ) ,some apple cider vinegar, brown sugar, some onion salt and I Think 5 Or 6 plastic bottles of "French's" Mustard. My mind has lost a lot of memory due to 5 mini strokes 😢 But I sure do Hope and Pray that maybe what I DID remember could help YOU figure out what was in that wonderful "Sweet Hot Beer Mustard"! So you buy mustard seeds by the gallon... ;). Hehe. And agreed on the letting mellow. First time I did, tasted, ooh spicy, added honey, and honey and honey. Nothing was killing the heat. 2 mths later, I opened jars of honey flavored with mustard. Must say I cannot stand sweet things... so gifted it all away. Everybody loved. Lesson learned. lOVED the no tilting.
This looks good as usual by looking at it you said it was nice and mellow I would have thought it would have been a little more spicy but I believe you I'm interested in all of these mustards that you said you were going to make
Do you water bath can to get a little longer shelf life and or gifts, rather than just leave in the fridge? I have never made mustard....but not for long!

Couple of questions: 1- what is the reason this is not usda approved? Is it because of the whole mustard seeds? 2- if I wanted to split this batch and make 1/2 of it spicy using cayenne, could I just stir in the cayenne after filling the first few jars or would it not incorporate correctly? 3- does this have a strong beer taste? Could home brew be used in place of a dark beer?
Not approved only because I did not use an approved recipe from Ball or the USDA. Whole seeds are fine to can. You can totally stir the cayenne I to half the batch no problem. You can use any beer you like, even home brew, so long as it isn’t a really bitter beer. Hope I got it all! 😃 you will love making your own mustard!! 😊

While this beer mustard is great, we like things spicy so I'm extremely interested in the other versions. The most delicious mustard I ever had was Cranberry Mustard. No kidding. Bought it in the deli section of a grocery store and haven’t seen it since. That was years ago and I’ve wanted some ever since. Any idea on how to make that? *subtle hint* 😄

The brown mustard seeds tend to be a little spicy themselves ,but will mellow out in about two weeks. 😊 The mustard is more mild and a little sweet.

Yes. Otherwise you have a quart for the fridge you would need to use up within a month maybe 2. They will last longer canned. 😊

It is a slightly sweet mustard with hints of beer. Not strong. 😀

Jeni...I had ground up some yellow mustard seeds to a powder. Can I use that?
No, you relly need to use the seeds in this form, for canning. You can do that if you are freezing instead.
