When I was in high school in the covered wagon days lol I worked in a wonderful Chinese restaurant. We would make the hot mustard by simply stilling water and mustard powder together. I’d have tears in my eyes as I stirred that huge bowl.
My starter husband had a friend whose mother made mustard. It was SO good - I went and bought things just so we could put that mustard on it, and I tried for years to buy one with the same flavor as hers. Nance's came close. Now that I'm retired, and the supply chain is kinda sorta broken, I love being able to experiment with food. I've always been self-sufficient, but videos like this, and the ideas people share on YT, are, well, the mustard on my hotdog! Edited to add: I've been looking for mustard seed...so far I can't find any, but it's on the list.
OMG!!! I am all ready a mustard snob. My son looked in my refrigerator one day and asked why I has so many mustards. Can’t wait to make this. Can you see my doing a happy dance? Lol
My wife and I usually go to a German sausage stall at a Christmas market. Of course this year it's not happening and she's disappointed. So you've inspired me to make her some of this mustard to go with Bratwurst to cheer us up. Thanks a lot! 👍
@@littleme3597 I haven't a clue why, but my mustard making experiment was a complete failure. It looked like mustard, but wasn't spicy at all, which was very odd as the individual seeds were. We couldn't figure it out. The Bratwurst was great though. Cheers!
For the time being, life is slowing down and am getting closer to breaking out the canning jars. Condiments for cost savings, sugar savings, and salt savings is on my list. I even came across smaller jars in January. This will be a video recipie on my list.
I use the cumin, roasted red peppers, garlic, paprika, onion powder, I throw in 6 or so Spanish olives, olive oil until smooth. I do not like tahini. This is to one can of chick peas. Love it. I guess I could can the chicken peas this way, and then add olive oil, and blend. Ready to go. What do you think? Can I chop olives and can them?

This looks easy however, for me, there is a drawback. There is a hell of a lot of alcohol abuse in the history of our family, which is something that I've steered clear of by living like an ex-alcoholic. Completely alcohol free. So I daren't have any in the house, especially since I live alone. In order to make this easy recipe, what would you suggest replacing the beer with, if anything?
I love making homemade mayo, so the addition of homemade mustard is fantastic!

I recommend no more than 1 teaspoon of fine salt with the amount of ingredients used. Other than that, its a good mustard👍
i prefer the more tradition methods. soaking the seeds is the magic not grinding them dry.

If you're adding chopped olives to soaked chickpeas and canning them for the chickpea time, yes. Don't blend until you empty the jar
