Here is the thing... there is also the theory that... the Mario we see is not the same Mario that was with Pauline... the Mario that saved Peach had a brother named Luigi and is friends with Donkey Jr... the Mario that was with Pauline... he was rivals with Donkey Sr. Now known as Cranky Kong Pauline cares about the Mario with the brother Luigi.. but not romantically... Donkey Jr that is friends with Mario and Luigi has a missing father. But both are Star Children. All the Star Children are missing their parents... or at least their fathers. So... what if... Pauline is the mother of the current Mario and Luigi... and the original Mario... is dead.... Also, I think that artist image is bad and since it's a pixel, it's probably just a bad pixel art and there was no change.

Then Tatanga kidnapped and experimented on her causing her hair and skin colors to change. Then her royal clothier told her that yellow would be a more complementary color for her new appearance. Red and yellow don't look good together so Mario ditched Daisy turned his eyes to Peach (then experimenting with white and red). Unfortunately, Peach wasn't interested. However, his experience as a carpenter was enough to pass himself off as a plumber, which the Mushroom Kingdom so desperately needed (I mean, look at all those PIPES!). It wasn't long after being hired as the royal plumber that the neighboring kingdom, the Koopa Kingdom, attacked. Mario saw this as his opportunity to win Peach's affections. Using his knowledge of Mushroom Kingdom's pipes and sewer system, he stealthily made his way to King Koopa's castle (after visiting a few fake castles) where he found Peach and earned her respect. Meanwhile, Daisy was still in Sarasaland ruling as usual. Luigi, the sort-of-long-lost brother of Mario was already a plumber (cause he's better than Mario at everything) and sought out Sarasaland in search of a kingdom that also needed a plumber. Naturally, Luigi's high charisma and stellar good looks immediately caught the eye of the still-on-the-rebound Princess Daisy. She drafted him at once without asking about credentials. Her overly forceful personality was too much for even the mighty Luigi and his confidence was eventually worn down and he became submissive. During all this, the REAL Pauline (the one we see in Odyssey and March of the Minis) was playing Princess (kind of like a Princess and the Pauper if they never got around to switching back). With the return of Daisy, she was given an ultimatum to be sent to some lesser kingdom where she would still rule, albeit in a diminished capacity, or be locked in the dungeon forever. Guess which she chose? Out of spite she transformed a minor kingdom to a HUGE metropolis. She's good friends with Peach, but don't mention Daisy around her.

If your basis that the "new" Pauline is different because of the different-colored hair and face, I may remind you that the original Princess Peach was called Toadstool and she had red hair too. Either they are both replacements or neither of them are.

Obligatory Super Mario Odessey comment In all seriousness, I think the game will actually explain mario's origins and how he came to be in the mushroom kingdom. Why else would they include "New Donk City" and Pauline, which are obvious nods to the original donkey kong game?
But he's a native of the Mushroom Kingdom, as demonstrated in Super Mario World 2: Yoshi's Island, both him and Luigi were. I think the better question would be how they managed to have their little exploits in New Donk City; were they brought there by the Yoshis to be raised by foster parents? Did they go world-hopping and decided to spend time in New Donk's dimension because they weren't used to seeing other humans? I doubt Odyssey will get so lore-heavy, it's very unlike Mario games to do, but it's fun to think about.
I thought Miyamoto wanted "Story" and "Gameplay" to remain separate, and when he found out his staff put in Rosalina's backstory in "Super Mario Galaxy" without his consent, he was furious.
