you can do it months in advance but you run the risk of the quality lowering of there are sudden weather changes and not properly stored! For firm toppers at peak quality two weeks is pretty good. I hope this helps!
The tip about better fondant is really important. I've learned from my own experience that it's better to invest a little more money in good fondant. It saves time and nerves. But it takes a while until you find the best fondant for you. 🙂
Thats so true! The other day I had to use cheaper fondant to cover a cake ans was suprised it was a little easier because all these years I practised with the more expensive brands. Couture in the uk is my favourite, somewhere in Europe? what is good to use in your country?
I‘m actually using all pastes from Saracino (fondant to cover, modelling paste and flower paste). Before I used a fondant from a German company for years, but I had a lot of troubles with the fondant when the weather becomes hot and humid. The paste was sweating very quickly. And Massa Ticino is to soft for me. I know in Germany a lot of people swear on this brand, but it doesn’t work for me.
