    A slice of plain sponge cake, laid unadorned on a plate, would not likely excite anyone. All alone, it’s not very sweet or moist or interesting. But true to its name, a classic sponge cake is eager to absorb liquid deliciousness, transforming Plain Jane simplicity into something pretty glamorous. That’s tres leches cake, here presented in its most classic form, infused with Latin America’s beloved one-two punch of evaporated milk and sweetened condensed (lots of flan recipes call for both of these), plus a little whole milk for good measure. Frosted with whipped cream (some cooks like a meringue frosting, making the experience sweeter) and, perhaps, with the addition of some fruit, one bite is all you need to comprehend why this is a classic.
    Homey recipes for tres leches cake abound, made in a 13x9-inch baking dishes, doused with the milks and topped with frosting. But many bakeries in Mexico (and beyond) make two layer round or rectangular tres leches cakes, sandwiched with fruit and decorated beautifully enough for the most special occasions. That’s the path I’m on here.
    People who are far better trained historians than I am have been frustrated in their attempts to unearth the exact invention of this cake. Yes, it’s so incredibly popular in Mexico, many think it must come from there. But it’s just as popular in many Latin American countries. And yes, because cooks have been soaking cakes and breads with all kinds of liquid goodness for millennia, some think it must be ancient. But this particular soaked sponge cake with the inimitable infusion of two canned milks is unique. Was it the canned milk producers who thought up this version? If so, not one has stepped up to claim the distinction. Was someone making flan, but, realizing they had no eggs, doused a stale sponge cake with the eggless flan mixture and changed the course of history? Perhaps we’ll never know.
    Though this version is very traditional, I like to vary the milks (think variations like coconut milk in place of evaporated, cajeta instead of sweetened condensed, espresso instead of half the milk), add ground toasted nuts in place of a quarter of the flour, use caramelized apples for the fruit in fall-the possibilities are endless.

    I remember the first time I saw u on tv when I was a kid, I was channel surfing and ran into u on KPBS in San Diego, my mom goes put it back, u see that guy he's a cook that speaks Spanish and I was like no way. She says yes and he makes great Mexican food, I've been knowing about u for years after that and I wanna say thanks for all u have done for the people. GRACIAS CARNAL. Love the ensenada fish taco episode.

    I've made this with coconut milk and coconut cream for my lactose intolerant family. It worked brilliantly, and why not have coconut flavours in a mexican dish, right?

    I live in Guadalajara and many of the small restaurants, cafes, coffee shops here actually buy the Tres Leches Cake (and other baked goods) that they sell at Costco. I was there today, multiple people went with a friend/co-worker and used 2 carts because there is a limit of 5 cakes of each type per customer. On the way out I saw a number of vans/trucks with the business name on the sides being loaded up. I guess since it’s made in Mexico, it’s authentic.

      try the ones from the neufel pastry shop, they are the best in Guadalajara, especially the three milk cake , also has a delicious white cream chocolate

    I'd say within the last 3-4 years I've expanded my Mexican cooking beyond Old El Paso Way taco seasoning.....(cringe!) but I've never tried Tres leches cake. I'm not much of a baker but I think I should at least try this. This looks really yummy. Thank you.

    This is one of our favorite desserts after 40+ years of traveling in Mexico. I think I can say that in all those years only once or twice was it made with the rich perfection of your recipe. I MUST now make this in my kitchen

    One of my favorite desserts!
    When my brother was getting married, a family friend put us in touch with someone who made a few tres leches cakes for us (just like that one!), along with a hundred or so tamales - beef, chicken, and vegetarian. It was fantastic!

    Thank you for sharing! I went to your website and followed the recipe. Somehow I ended up with what looked like cornbread-pancakes lol. They were strong though, didn't crumble. I'm sure I'm just not a good student lol. My egg whites looked nothing like yours though and I couldn't figure out how to make it work. I didn't have cream of tartar either and read online to substitute with apple cider vinegar so I wasn't able to follow the recipe to the dot. YOUR cake looks AMAZING though!!!

    Devour. When I watched this, that is the thought that flew threw my mind. It would be eaten with gusto and devoured. Light and fluffy, full of sweet milky moist goodness and the fresh berries give it the bright tart flavor that balances the sweet milk. Rick, did you add any sugar to the whipped cream? or was it just whipped cream?

    Beautiful, this is one of my favorite cakes. I have a Cuban bakery near me that prepares their tres leches the same way (milk & berries cake), it's perfect as a birthday cake. Does the whipped cream need to be stabilized? Thank you Rick.

    I’m very interested in this video. I’ve eaten what I can only assume is _average Tres Leches cake_ at Mexican coworkers’ birthdays and I was a bit disappointed. Yet, I’m pretty sure that if made well it’s one of those desserts that creates a core memory and why so many try to imitate it. Watching with anticipation.

    I followed the directions to a tee but my egg whites beat so stiff that they were difficult to fold into the batter. I added the exact amount of sugar and cream of tartar and beat them for the specific amount of time. Not sure what went wrong or if this might’ve affected the batter and cakes 😩😢 Any advice??

    I personally like this cake but I’ve noticed very quickly, in bringing it to my coworkers, that it’s a very divisive cake in that Anglos especially feel that it’s too soggy or wet. 🤷‍♂️

    i just had a tres leches from Kroger's.....and i remember when I was young i had to go to a mexican bakery. How times have changed....oh and it was topped with Oreos 😂. Love your content and not sure if it was real but i saw you would be competing with Shannon Sharpe. I hope that's true

      Some people sweeten it more, but I find that the 3 milks give it enough sweetness.

    I don't much like the white tres leches, though it is refreshing on a hot day. But chocolate tres leches, well, we used to buy a big one for 200 pesos from Soriana and just take a fork to it, and that was dinner. Almost like the mayor in the movie Chocolat.

      The bakery and pastry in Mexico is the direct influence of the French, there may not be many cakes created in Mexico but the amount of bread is immense in shapes and flavors

    I don't think I've made a cake creaming butter and sugar. I was also thinking, the vanilla I remember seeing in Mexico was sold in large quantities and was rather cheap. I doubted it was real vanilla.
