I live in Guadalajara and many of the small restaurants, cafes, coffee shops here actually buy the Tres Leches Cake (and other baked goods) that they sell at Costco. I was there today, multiple people went with a friend/co-worker and used 2 carts because there is a limit of 5 cakes of each type per customer. On the way out I saw a number of vans/trucks with the business name on the sides being loaded up. I guess since it’s made in Mexico, it’s authentic.
try the ones from the neufel pastry shop, they are the best in Guadalajara, especially the three milk cake , also has a delicious white cream chocolate

I'd say within the last 3-4 years I've expanded my Mexican cooking beyond Old El Paso Way taco seasoning.....(cringe!) but I've never tried Tres leches cake. I'm not much of a baker but I think I should at least try this. This looks really yummy. Thank you.
I've made this with coconut milk and coconut cream for my lactose intolerant family. It worked brilliantly, and why not have coconut flavours in a mexican dish, right?

I'm sure I'm just not a good student lol. My egg whites looked nothing like yours though and I couldn't figure out how to make it work. I didn't have cream of tartar either and read online to substitute with apple cider vinegar so I wasn't able to follow the recipe to the dot. YOUR cake looks AMAZING though!!!
Devour. When I watched this, that is the thought that flew threw my mind. It would be eaten with gusto and devoured. Light and fluffy, full of sweet milky moist goodness and the fresh berries give it the bright tart flavor that balances the sweet milk. Rick, did you add any sugar to the whipped cream? or was it just whipped cream?

I don't much like the white tres leches, though it is refreshing on a hot day. But chocolate tres leches, well, we used to buy a big one for 200 pesos from Soriana and just take a fork to it, and that was dinner. Almost like the mayor in the movie Chocolat.
I followed the directions to a tee but my egg whites beat so stiff that they were difficult to fold into the batter. I added the exact amount of sugar and cream of tartar and beat them for the specific amount of time. Not sure what went wrong or if this might’ve affected the batter and cakes 😩😢 Any advice??
The bakery and pastry in Mexico is the direct influence of the French, there may not be many cakes created in Mexico but the amount of bread is immense in shapes and flavors
I don't think I've made a cake creaming butter and sugar. I was also thinking, the vanilla I remember seeing in Mexico was sold in large quantities and was rather cheap. I doubted it was real vanilla.

There are a number of things that Costco makes well. Cake isn't one of them.

Any thoughts on sweetening the whipped cream or does the milk mixture bring enough sweetness?
Some people sweeten it more, but I find that the 3 milks give it enough sweetness.
