Amazing Tres Leches Cake From Scratch *with homemade milk syrup*

  • Make this fantastic tres leches cake entirely from scratch (with homemade milk syrup) with simple steps and ingredients. I’m sharing my tips to make soft, moist yet not soggy tres leech cake with the perfect amount of sweetness.

    📝The ingredients:
    It is enough for: a 10.5” (27 cm) x 6.5” (16.5 cm) rectangle pan
    Sponge Cake:
    • Egg yolk: 68 g | 2.4 oz (about 4 large eggs)
    • Salt: 1/8 tsp
    • Egg white: 142 g | 5 oz (about 4 large eggs)
    • Granulated sugar: 150 g | 5.3 oz (3/4 US cup)
    • All-purpose flour: 120 g | 4.2 oz (1 US cup)
    • Whole milk: 80 g | 2.8 oz (1/3 US cup)
    🔥 350F (176C) for about 25 minutes until the center bounces back gently
    Start checking from a bit earlier just in case.
    Adjust the time and temperature depending on the oven, the thickness of the batter, etc.
    Milk Syrup:
    • Milk: 740 g | 26.1 oz (3 US cups)
    • Heavy cream: 60 g | 2.1 oz (1/4 US cup)
    • Granulated sugar: 50 g | 1.7 oz (1/4 US cup)
    • Vanilla extract: 1 tsp or more as you like
    • Vanilla beans: 1/2 pod
    Cook them down to 400 g | 14.1 oz (the amount after straining it in the end)
    A Quick Milk Syrup:
    when you want to use condensed milk and evaporated milk, mix:
    • Evaporated milk 250 g | 8.8 oz (1 US cup)
    • Condensed milk 100 g | 3.5 oz (1/3 US cup)
    • Heavy cream 60 g | 2.1 oz (1/4 US cup) * updated amount
    • Vanilla extract 1 tsp (or more as you like)
    • Vanilla beans 1/2 pod (optional)
    Whipped Cream Topping
    • heavy cream: 300 g | 10.6 oz (1 1/4 US cups)
    • Granulated sugar: 17 g | 0.6 oz (4 tsp)
    Decoration
    • Fruits or any ingredients you like: Some

    Honestly , I am not really a baker. I much prefer home made desserts but many have stopped making home made as that generation are older. So I think I am going to learn to make my favourite deserts. Someone said her fav is Tres leche and I said , no I never had it.
    You’re a magician with cake batter , frosting and an oven! Sooooo , I am saving your recipe to give it a try at Easter. Let’s see if I can WOW my friend ….😊. I don’t like too sweet so I will do exactly what you did.

    Aya, even though I’m Latina I’ve never cared for tres leches cake as I find it too sweet even without the meringue some use to top it (team whipped cream all the way for me). I am very curious to try to your milk syrup instead. I always feel like I can trust your recipes won’t be too sweet (but I like that you also use enough sugar, because some channels I like go too far in the other direction 😅).
    I like tres leches with tea in the soaking liquid for a variation that introduces some nice bitterness, too.

      After having the whipped cream version, I haven't been able to enjoy meringue versions at all 😅 The tea sounds intriguing, what type if tea have you tried? Are you going for a light steep or does it need to be on the stronger side to cut through the dairy?

    Hi Aya! I just had my first Tres Leches in Istanbul last Sept. It looks so simple but so delicious. Thank you so much for sharing how to make this especially from scratch, now I can make it at home. Have you ever heard of a sponge cake soaked in 7-up and mixed with fruit cocktail? I had it many decades ago in Hawaii and cannot trace back that cake anymore. It is a freezer cake. Thank you!

    I made a strawberry shortcake with your other chiffon cake recipe last week 😁 it was soo good! It was the first time I had made chiffon cake but it turned out amazing even though I forgot to flip the pans upside down for cooling lol

    This cake is one of my favorite cakes! I prefer cakes with a whipped cream topping instead of icing. Icing is way too sugary for me. Plus icing is too dense for a rich cake such as this. Thank you, it looks beautiful and I’ll have to try making it with your version of the milk!

    A this be made with stevia instead of sugar? Can cartoned egg white and egg yokes work. Can low fat or low calorie condensed milk or cream be used? Thank you it looks delicious. Enjoyed it in Costa Reina last week!

    Ahhhhh I finished watching it and it looks so good QAQ minute I get groceries I’ll try this out I’m kinda sad that I don’t rly have any berries as topping cuz they’re not rly good where I live but ig it doesn’t rly need it or maybe I could add some fruit jam?

    Thank you for sharing and reaching us your recipe. Lovely cake. May I ask, if I want to make this for a party could I add the whipped cream and fruit whilst the prepared sponge is in the cake tray? That way I can bring the cake whole to the party? Is that ok? Makes sense?

      Hello! That's fine if it's not going to be at room temperature for too long since the whipped cream starts getting looser when it gets warmed up. I recommend transferring it in a cooler box or somewhere cooler.

    Tip: when you boil the milk add 4-5 marbles to the pot it will help with the movement of the milk.

      Hello! It doesn't contain baking powder or soda. I recommend using all-purpose flour for this cake!

    HI Aya! This is my 3rd attempt making your fluffy cake. I follow every step and have changed temperatures but for some reason the middle part always comes out raw everything else comes out perfect except for the middle. Any tips on why that might be happening?

    QUESTIONS! - YDO shows you make with fresh milk total 800 gm so you cook down to less than 400 gm (half). If I use the version of 3 milk, the total is only 400 gm. How long do I need to cook it for or just mix and warm only? I am preparing to make this. THANK YOU!

    Why you whip and mix separately? Is there a science behind or you just like that way? I’m curious about it. I love your recipes i have made a couple now and I love it.

      why do I whip the egg and fold the flours separately for the sponge cake? Yes, that is because we do not want to kill too many air bubbles in the whipped egg - By folding, you can mix without killing them too much which leads to a softer sponge cake. The air bubbles expands in the oven and push the cake up!

    It looks very nice and neat, but to me needs to be soaked more in the 3 milks, also tres leches need rum or some type of liqueur, no need to warm up the milk, I come from the original tras leches country, Nicaragua

      Tres Leches originated from Mexico and I’ve never heard of adding rum or liquor to it.
