I made this the other day and it is easily the best tres leches I’ve ever made. I doubled the milk mix like suggested, and I finally got the moist texture I like in a tres leches cake. The cake held up so well. I would say days 2-3 are the best days for this cake. Having it on the first day is a sin because it doesn’t do the cake justice. It needs to soak at least overnight to really get the full flavor and texture. Next time, I am going to steep the milk mixture with citrus peels and cinnamon sticks for extra depth of flavor and then soak the cake. Takes a bit more time but so, so worth it! Thank you so much good sir. You are a master of your craft. Everything I’ve made by you is always perfect and I think it’s due to how much attention you pay to details and how well you communicate with your audience. You really take the time to think about everything and it shows because when I make a recipe of yours I’m never confused or lost. You think of it all!
So if I make the cake tonight and let the milks soak in overnight and make the whipped cream in the morning and put the whipped cream on, will it hold till dinner time?
I followed this recipe. I had never made a cake from scratch or done anything requiring egg separating or anything like that, so I was slightly overwhelmed at first 😂 but you made it look so easy and it was really easy to follow along to! With each successful step I felt super proud of myself. The whole reason I even made this cake was because someone very special to me told me it was his favorite cake and that it was what he wanted most for his birthday. Anyone else struggling with the measurement of flour? 2 cups isn't 240g.... Should I do 2 cups or 240g?.. my 1 cup measuring cup says. 1 cup = 236ml...
That's a liquid measuring cup. You need a scale to weigh flour. Otherwise, sift well and spoon out into your measuring cup to the 2 cup line, without compacting flour and it will be close to accurate.@jessicariley6235

On my 18th birthday, my mom bought me a tres leches cake from Costco and it had a strawberry fitting in between the two cake layers. My family and cousins have been obsessed since and it’s one of the first birthday cakes we finished fully. Everyone enjoyed it and now we have been having some variation of tres leches instead of a ‘tradition’ cake. So I really wanted to learn how to make it and will try this recipe today! Sooo I’m Update: I made it and while I work working on whipping up your egg whites, it wasn’t getting the peaks and it was a good 5-7 minutes whisking, probably even longer because I knew that it would be the most important part of making tres leches. So it got slightly thicker but not those stiff peaks. My cake was verrrrryyyyyy hard. I had some hopes that the milk mixture would get soaked up and make the cake mushier but it did absolutely nothing 😢 I just wanted to know why they weren’t whipping or if there is something else that was the issue. I did get confused at one part where you mixed in the yolks with the flour, my mixture be came verrrrrrry thick. I followed everything by it’s measurements so what may be the problem? 😢

I love making the sauce and putting it over all of my favorite cakes. I just recently used a pumpkin bread kit and put the sauce on it, everyone at the party went wild for it. There wasn't a single slice of cake left in the pan by the end of the event.

Nicaraguans introduced the cake to Guatemala, Mexico, and other countries when they migrated north into the USA. It makes sense how the history got skewed. More often than not Mexicans claim stuff automatically without doing any research. In Guerrero Mexico they have Nacatamales when it already exists. It’s another Nicaraguan dish they claim is theirs. 💀 the list goes on. Mole tamals? That was Guatemala’s idea. But Oaxacans made it recently im the 1990s. In México there was a practice of soaking dry bread in wine to soften it up (a practice that the Spanish brought to México) in the mod 1920's Nestlé opened a production plant in México in which they made condensed milk, so people started soaking bread in it, and pan de tres leches was born. The plant in México started printing the recipe in the back of carnation condensed milk cans. A couple of years later Nestlé started shipping condensed milk to Nicaragua during the U.S. military presence, they had the plant in mexico provide the supply, the cans they shipped were the ones with the ,pan de tres leches, recipe on it. In México pan de tres leches was popular, but the recipe completley blew up in Nicaragua, to the point they made it a national dish. Not realizing that the recipe was from Mexico, but that didn't stop you guys from nationalizing it Nestlé even backs this claim up. The recipe originated in Mexico.

Mexico did not invent tres leches. What likely happened is when Nicaraguan migrants traveled through Mexico they introduced the cake. Stop it.
My daughter always prefers these tres leches cakes for her birthdays. Speaking of coffee, I’m a person who’s always needed something sweet for breakfast. Thank you for sharing this tres leche cake recipe, John! It’s delicious! One suggestions for the syrup: you could add 1/4 - 1/2 cup of dark rum. It would give the cake a bit extra flavor and a bit booze. It’s a suggestion from my husband and tested well amongst people who tried my cake.

I agree - though my mistake was to make the other one which as a video here: ua-cam.com/video/nyZOSH8i5rA/v-deo.html This one had butter in it and was not airy at all, and really did not soak the sauce very well. All in all I felt it was a waste. And the confusing part is that blog recipe leads to this video and they are not the same recipe at all.. I recently made this cake from a box which did not require any fat, and the cake when baked turned out similar to the one in *this* video, which ended up just perfect when soaked. So I might give this video recipe a go. However it still sounds like very sweet, I might cut away some from the cake, especially if using sweetened condensed milk in the sauce.
@@nihant5520 I would be careful with taking out sugar as these eggs need it for stabilization and to create that emulsion to capture air which helps with the rising of this cake, otherwise the cake may not rise enough. I'm not saying u can't.
When y'all mix the yolk please make sure your bowl is warm may be in microwave for 30sec to minute. Unless it's impossible to firm the yolk. I wasted eggs until I find out it needed to be warm.

I love tres leches cake too! I played around with a couple f extra versions to add to my repertoire. 1. At Christmas, I add homemade, spiked egg nog in place of the evaporated milk and cream. 2. I make a chocolate version with a rich, Mexican hot cocoa. And to round up and have a trifecta.... 3. I’ve used coconut milk in place of evaporated milk or cream.

*Tres leches was inspired originally from England around the middle ages. Considering its form, tres leches can be categorized as Trifle Cake which originated in England. Soaking a cake was and still an easy way to repurpose old or stale cake. In the 1930 depression hits and prices were skyrocket but canned milk were affordable and added luxury to cooking in times of needs. Someone in Nicaragua got creative possibly inspired by "Pio V" or "Sopa Borracha", and combined evaporated milk, and whole milk to sponge cakes, and soaked the cake with the MegaMilk.*
Thankfully, I was able to pull off the techniques for making this cake. I did have to dump one set of egg whites on my first try because they had a little bit of yellow in them and would not whip. But I forged ahead and prevailed! The cake rose appropriately, and soaked overnight without becoming mush, and everyone was happy including some Mexican-American friends. They thought it was exactly right. Amazing! I did think it was overall delicious, but I would prefer less sugar. The chef said in the intro to the video that it was "not too sweet," but it was "too sweet" per traditional norms. I felt my head spinning around after one small slice and I prefer to feel more normal afterwards. I wish I knew how I could make the cake with 1/2 the sugar in the batter, since the condensed milk syrup brings on more sugar and can't be substituted. I don't know how to make that adjustment and keep the same texture.

Filter the flour
Mix with the egg yolks evenly before folding the whites
Add the flour in batches to the york rather than vice versa

I made this for a family gathering and it was perfect! My father in law is Mexican so my husbands family is pretty particular the tres leches. My husband said it was the best tres leches he ever had, not too sweet. 🎉

I tried this recipe. Amazingly good and pure. Tres leches should be as simple as possible, as this amazing dude is showing. This cake is so good it doesn't really need anything special.

On my 18th birthday, my mom bought me a tres leches cake from Costco and it had a strawberry fitting in between the two cake layers. My family and cousins have been obsessed since and it’s one of the first birthday cakes we finished fully. Everyone enjoyed it and now we have been having some variation of tres leches instead of a ‘tradition’ cake. So I really wanted to learn how to make it and will try this recipe today! Will let you know how it goes, I’m not much of a baker but this seems easy. 😅
Sooo I’m Update: I made it and while I work working on whipping up your egg whites, it wasn’t getting the peaks and it was a good 5-7 minutes whisking, probably even longer because I knew that it would be the most important part of making tres leches. So it got slightly thicker but not those stiff peaks.
My cake was verrrrryyyyyy hard. I had some hopes that the milk mixture would get soaked up and make the cake mushier but it did absolutely nothing 😢 I just wanted to know why they weren’t whipping or if there is something else that was the issue.
I did get confused at one part where you mixed in the yolks with the flour, my mixture be came verrrrrrry thick. I followed everything by it’s measurements so what may be the problem? 😢

I love making the sauce and putting it over all of my favorite cakes. I just recently used a pumpkin bread kit and put the sauce on it, everyone at the party went wild for it. There wasn't a single slice of cake left in the pan by the end of the event.

I first had tres leches cake when i was in saudi arabia, i got it from this turkish resteraunt called modo, and i just fell in love with it. Then me and my mom made it at home and we've been making it ever since.

Nicaraguans introduced the cake to Guatemala, Mexico, and other countries when they migrated north into the USA. It makes sense how the history got skewed. More often than not Mexicans claim stuff automatically without doing any research. In Guerrero Mexico they have Nacatamales when it already exists. It’s another Nicaraguan dish they claim is theirs. 💀 the list goes on. Mole tamals? That was Guatemala’s idea. But Oaxacans made it recently im the 1990s. And oh yeah, the gatekeeping of mesoamerican food. But I digress

In México there was a practice of soaking dry bread in wine to soften it up (a practice that the Spanish brought to México) in the mod 1920's Nestlé opened a production plant in México in which they made condensed milk, so people started soaking bread in it, and pan de tres leches was born. The plant in México started printing the recipe in the back of carnation condensed milk cans. A couple of years later Nestlé started shipping condensed milk to Nicaragua during the U.S. military presence, they had the plant in mexico provide the supply, the cans they shipped were the ones with the ,pan de tres leches, recipe on it. In México pan de tres leches was popular, but the recipe completley blew up in Nicaragua, to the point they made it a national dish. Not realizing that the recipe was from Mexico, but that didn't stop you guys from nationalizing it
Nestlé even backs this claim up. The recipe originated in Mexico.

Mexico did not invent tres leches. What likely happened is when Nicaraguan migrants traveled through Mexico they introduced the cake. Stop it.
My daughter always prefers these tres leches cakes for her birthdays. Speaking of coffee, I’m a person who’s always needed something sweet for breakfast. So once I started drinking coffee I realized I could drink it sweet to keep myself from eating too much sugar or fatty foods in the morning. Thanks for the recipes & tips as always!
If you add some mascarpone to the cream when you are whipping it (or after) the cream will be more stable. I love mascarpone. It's like solid cream.

I’m from PR cause the heavy cream is a little expensive we use condensed, evaporated and regular fresh milk and the taste of the tres leches is beyond heavenly, had baked few times and garnish with home made italian merengue 🧁.

One suggestions for the syrup: you could add 1/4 - 1/2 cup of dark rum. It would give the cake a bit extra flavor and a bit booze. It’s a suggestion from my husband and tested well amongst people who tried my cake.

My mom loved this cake! I was going to buy a tres leches cake for her birthday but then I saw this recipe. I was worried that I didnt have a metal pan. I baked in a glass 9x13. It took longer but it still cake out perfectly.

I agree - though my mistake was to make the other one which as a video here: ua-cam.com/video/nyZOSH8i5rA/v-deo.html This one had butter in it and was not airy at all, and really did not soak the sauce very well. All in all I felt it was a waste. And the confusing part is that blog recipe leads to this video and they are not the same recipe at all..
I recently made this cake from a box which did not require any fat, and the cake when baked turned out similar to the one in *this* video, which ended up just perfect when soaked. So I might give this video recipe a go. However it still sounds like very sweet, I might cut away some from the cake, especially if using sweetened condensed milk in the sauce.
@@nihant5520 I would be careful with taking out sugar as these eggs need it for stabilization and to create that emulsion to capture air which helps with the rising of this cake, otherwise the cake may not rise enough. I'm not saying u can't.

When y'all mix the yolk please make sure your bowl is warm may be in microwave for 30sec to minute. Unless it's impossible to firm the yolk. I wasted eggs until I find out it needed to be warm.

I played around with a couple f extra versions to add to my repertoire.
1. At Christmas, I add homemade, spiked egg nog in place of the evaporated milk and cream.
2. I make a chocolate version with a rich, Mexican hot cocoa.
And to round up and have a trifecta....
3. I’ve used coconut milk in place of evaporated milk or cream.

Very good!!!!!! In Brazil we make a cake similar to this one, but to wet the cake we use coconut milk, condensed milk and whole milk. We call it Bolo Gelado.

*Tres leches was inspired originally from England around the middle ages. Considering its form, tres leches can be categorized as Trifle Cake which originated in England. Soaking a cake was and still an easy way to repurpose old or stale cake. In the 1930 depression hits and prices were skyrocket but canned milk were affordable and added luxury to cooking in times of needs. Someone in Nicaragua got creative possibly inspired by "Pio V" or "Sopa Borracha", and combined evaporated milk, and whole milk to sponge cakes, and soaked the cake with the MegaMilk.*

Thankfully, I was able to pull off the techniques for making this cake. I did have to dump one set of egg whites on my first try because they had a little bit of yellow in them and would not whip. But I forged ahead and prevailed! The cake rose appropriately, and soaked overnight without becoming mush, and everyone was happy including some Mexican-American friends. They thought it was exactly right. Amazing! I did think it was overall delicious, but I would prefer less sugar. The chef said in the intro to the video that it was "not too sweet," but it was "too sweet" per traditional norms. I felt my head spinning around after one small slice and I prefer to feel more normal afterwards. I wish I knew how I could make the cake with 1/2 the sugar in the batter, since the condensed milk syrup brings on more sugar and can't be substituted. I don't know how to make that adjustment and keep the same texture.
